1Before entering

A specialty shop for Aomori Tsugaru Goshogawara-style niboshi ramen, nestled in a residential area 3-5 minutes on foot from Keikyu Kamata Station East Exit, and also within walking distance from Kojiya Station. It is a central store of Waka Group (originating in Oimachi, operating 6 branches), with an attached noodle factory that supplies noodles to all group stores. Known as a 'morning ramen' (asa-ra) friendly shop operating from 7 AM, there are instances of no wait when arriving around 6:55 AM, immediate entry before 10 AM, and even on Saturdays around 12:30 PM. It is a standalone shop located in a residential area along the Keikyu line.

2Buying meal tickets and ordering

The process is to buy a meal ticket from the ticket vending machine located outside the shop (next to the entrance) before entering. This is not a shop where queues are constant; usually, you can buy a meal ticket from the vending machine without lining up. However, if there's a queue outside, it's safer to check the end of the line and decide whether to join the queue or buy a ticket first (saki-bai: buy ticket BEFORE joining the queue). The ticket vending machine accepts cash only; electronic money, QR codes, and credit cards are not accepted. Their signature Aomori Tsugaru Niboshi Ramen comes in 3 levels of richness: assari (light, clear chintan soup, strong saltiness) / chunou (medium, balanced type) / gokunou (extra rich, cement-colored thick soup), priced from 850 yen to 1050 yen. They also offer Miso Niboshi Ramen (flat medium-thick noodles), Spicy Niboshi Ramen, and a new menu item, Wagyu Mazesoba. Aedama (mixed noodles) for 200 yen is popular as an extra noodle (kaedama: extra noodle), offering a two-stage enjoyment style: eat half plain like abura soba, then dip the rest into your leftover soup like tsukemen. Side dishes include the Tsugaru Zuke-don Set for 150 yen, Natto Tamago Gohan Set, Chashu-don Set, and Fried Rice Set. Sets can be combined from around 1000 yen.

3Seating and receiving your order

It has a compact layout with 8 counter seats. After buying a ticket and entering, hand your meal ticket to a staff member and take your assigned seat. During morning ramen (asa-ra) hours, it's often operated by one staff member, so waits can sometimes be around 10 minutes during busy times. Orders are generally served within 5 to 10 minutes, and you can see the noodle making machine in action close by.

4Other information

On the counter, 'Niboshi Vinegar' and 'Niboshi Sauce' are available, which can be enjoyed for flavor change, in addition to aedama or extra noodles (kaedama: extra noodle). The soup is prepared using carefully pre-processed Aomori Tsugaru Goshogawara-style niboshi, with the unique bitterness and harshness of niboshi carefully suppressed to bring out pure umami. The noodles are homemade by the group's Waka Seimenjo noodle factory; Tsugaru Niboshi ramen uses medium-thin to medium-thick chewy noodles, while Miso Niboshi ramen uses flat medium-thick curly noodles, optimized for each flavor. The chashu is thinly sliced and flavorful. It's unusual that 'fu' (wheat gluten) is included by default. The Tsugaru Zuke-don is a side dish inspired by Aomori's local cuisine, allowing you to enjoy toppings with regional character. The Waka Group employs a strategy of changing shop names and flavors for each brand, and this shop is a central presence supporting that multi-brand expansion.
