Asakusa Jukusei Miso Ramen Noriaki Bibi
浅草 熟成味噌らーめん のりあき・美々
Overview
"Asakusa Jukusei Miso Ramen Noriaki Bimi" is a specialty shop for aged miso ramen, located in Komagata, just a 2-minute walk from Asakusa Station on the Toei Asakusa Line. The shop name "Bimi" embodies the concept of "delicious and beautiful," marking it as a highly regarded establishment in the world of miso ramen, having won top honors in the New Shop Miso Category of the TRY Ramen Awards. The signature Aged Miso Ramen (1200 yen) is characterized by its rich aged miso soup, blended from four types of miso. It's a profound bowl where umami from animal ingredients, the richness of pork back fat (seabura), and a hint of ginger create intricate layers of flavor. Another appealing aspect is how the thick layer of oil on the surface surprisingly lightens in taste as you approach the bottom, a change in character influenced by temperature and time. The noodles, from Mikawaya Seimen, are crinkled and can be described as medium-thick or medium-thin, designed to perfectly coat the miso soup without feeling overly heavy. Toppings include stir-fried vegetables and minced meat cooked in a wok, thick and tender pork chashu, and grated yuzu zest sprinkled on top to cut through the richness. The ultimate enjoyment comes from the three-stage flavor transformation: first, dip the noodles in a free raw egg, sukiyaki style; next, add the extra miso (oi-miso) provided separately on the table; and finally, finish with a ginger-infused soup wari (diluted broth) to adjust the temperature and flavor balance. This single bowl offers a diverse array of culinary shifts. Customization is also possible with additional toppings like butter, corn, or ajitama (seasoned egg), allowing you to fully explore the breadth of miso ramen flavors at this establishment.

1Before entering
Located in Komagata 1-chome, a 2-minute walk from Asakusa Station on the Toei Asakusa Line. Open from 11:30-14:30 / 18:00-23:00, almost year-round. On weekends around 12 PM, a queue of 12-15 people is standard, and the line often grows rapidly starting 20 minutes before opening. It's relatively easier to enter during the latter half of weekday dinners (after 9 PM).

In addition to cash, credit cards (VISA/Master/JCB/AMEX/Diners), QR code payments (PayPay/d払い/Rakuten Pay/au PAY), and all transportation e-money cards are accepted.
3Seating and receiving
Total of 10 seats: 6 counter seats + 1 table. Staff will guide you to an empty seat; hand over your meal ticket. Food is served in approximately 5-10 minutes.
4Other
The soup is an aged miso blended from four types of miso, characterized by a rich animal-based umami and a deep sweetness. The surface layer of back fat and ginger accents create a multi-layered flavor; while the volume is more modest than Junsumi-kei style, the umami is ample. The noodles are medium-thick to medium-thin curly noodles (from Mikawaya Seimen), designed to coat the miso soup well. Toppings include stir-fried vegetables and ground meat cooked in a wok, thick and tender pork chashu, and grated yuzu scattered on top to balance the richness. A raw egg (free service) is provided, and dipping noodles in it sukiyaki-style is a popular way to eat. On the table, there's extra miso (served separately) for flavor adjustment, and a ginger-infused soup-wari (broth for diluting soup at the end) is available, offering a three-stage flavor transformation. The shop has a track record of top awards in the TRY Ramen Award New Miso Shop category.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
