Chuka Soba Fujii Namba Sennichimae
中華そば ふじい 難波千日前店
Overview
This popular shop in Sennichimae consistently draws long lines, standing as a pioneer in Kansai for squarely introducing se-abura shoyu (pork back fat soy sauce) and Onomichi-style chuka-soba (Chinese-style ramen). In a Kansai where rich tonkotsu shoyu (pork bone soy sauce) and tori paitan (chicken white broth) are mainstream, this establishment carved out its own unique spot on the ramen map by presenting a Kanto-to-Onomichi regional flavor—characterized by the sharp profile of pork back fat and soy sauce—under the classic banner of "chuka-soba". The signature chuka-soba features a simple yet powerful composition: a dark soy sauce soup with floating se-abura (pork back fat), medium-thick straight noodles with a firm bite, two slices of loin chashu, menma (bamboo shoots), and negi (green onions). The owner's aesthetic of "subtraction" is evident in the exquisite balance; the pork back fat lends sweetness and richness to the mouthfeel while ensuring the soy sauce's distinct outline remains clear. A ritual unique to this main branch is the staff's advice to "Please mix the green onions before eating." This setup allows the aroma and pungency of the negi to integrate with the se-abura as you mix, transforming the flavor from the very first bite. Another distinctive feature is the depth of customization available for soup strength (light/regular), noodle firmness (kata/futsu/barikata, etc.), amount of pork back fat, and amount of green onions. This provides repeat customers with the pleasure of gradually discovering their perfectly personalized bowl. The consideration of serving "extra negi" on a separate plate further symbolizes the main branch's freedom in entrusting customers with the mixing process. The high quality of the side dishes is also a major draw of this shop. The "Lunch Set" (1,000 yen), which includes half chahan (fried rice) and karaage (fried chicken), is so complete that it feels regrettable to leave with just a single bowl of ramen. This establishment serves as a benchmark for chuka-soba in Namba, catering to tourists who are sightseeing and wish to "enjoy a full meal, not just one bowl of ramen."
How to Order
1Before entering: This is a specialty shop for chuka-soba (Chinese-style noodles) with pork back fat and soy sauce broth, located in the Sennichimae area, a 2-minute walk from Namba Station. It operates from 11:00 AM to 11:30 PM on Mondays, Wednesdays, Thursdays, Sundays, and national holidays, and until 3:00 AM on Fridays, Saturdays, and the day before national holidays. It's closed on Tuesdays. This popular shop always has a line, and during peak hours, waiting times can exceed an hour. The queuing method is unique: you issue a same-day numbered ticket using the in-store queue management system (airwait) outside the shop, and you can check your waiting time on your smartphone. You will be called via mobile phone or email when your turn is approaching, so you can wait in the vicinity after getting your ticket. Directly lining up in front of the shop is prohibited; the rule is to wait in a designated waiting area a short distance from the shop.
2Purchasing meal tickets / Ordering: Once called by a staff member to enter, you purchase meal tickets from the touch-panel ticket machine inside the shop (post-purchase system). The touch panel includes photos. The signature dish is Chuka Soba, and the Lunch Set (1,000 yen) with half fried rice or karaage (fried chicken) offers good value. When ordering, you can specify your preference for soup (usume/light / futsu/regular), noodle firmness (yawa/soft / futsu/regular / kata/firm / barikata/very firm), back fat (abura) (nuki/none / sukuname/less / futsu/regular / oome/more), and green onions (negi) (nuki/none / sukuname/less / futsu/regular / oome/more). However, these are only for special requests; the default is served if no preference is stated. If you request extra green onions (negi oome), they will be served on a separate plate.
3Seating and receiving: There are 22 seats. Follow the staff's guidance to your seat and hand over your meal ticket. When your food is served, the staff will advise you to "Please mix the green onions before eating." Mixing them makes the flavor more complex.
4Other: The ramen consists of a rich soy sauce broth with floating back fat, medium-thick straight noodles with a firm core, two slices of roast pork char siu, menma (bamboo shoots), and green onions (negi), offering a taste similar to Onomichi Ramen. The half fried rice and karaage are also highly rated, and ordering a set is recommended. Some find the touch panel a bit difficult to use, so it's a good idea to ask staff for help if you're unsure.
