Chukasoba Ito
中華そば 糸
Overview
Chukasoba Ito, located in Kanda Matsunaga-cho, is just a 5-minute walk from JR Akihabara Station. This shop is characterized by its "local production for local consumption" approach, utilizing ingredients sourced from across Japan. Their signature bowl features a meticulously prepared clear soup (chintan soup) made from Aichi prefecture chicken bones and Kagoshima prefecture pork bones, combined with a special tare (kaeshi) crafted from Kumamoto prefecture asari clams and Ise white soy sauce. The signature "Shiro-Ito" (a refreshing and light salt chukasoba, 1000 yen) delivers a powerful burst of umami that spreads despite its transparent appearance, with the clam-derived umami particularly lingering in the aftertaste. While the soup is so perfectly crafted that you'll want to drink every last drop, its saltiness is still distinctly felt. The noodles are thin straight noodles, made from "Aratamusha" wheat (specifically for Chinese noodles) with added whole wheat flour, offering a pleasant chewiness, a plump and elastic texture rather than just being hard, and a distinct aroma of wheat. Toppings include two types of chashu (braised pork and chicken): the chicken is moist from low-temperature cooking, and the pork has a pleasant chewiness. The bowl, meticulously garnished with crispy fried lotus root, kaiware (daikon sprouts), green onions, and thinly sliced round onions, showcases such careful craftsmanship that you'll want to call it "Chukasoba" rather than simply "Ramen." Variations like "Kuro-Ito," a richer pork bone series, and ajitama (seasoned egg) are also available. With only 8 counter seats and continuous operation from 11 AM to 11 PM, it's also a valued option for a late-night "shime ramen" (last meal of the day ramen).
How to Order
1Before entering
Located a 5-minute walk from JR Akihabara Station, along Kanda Matsunagacho street. Open continuously from 11:00 to 23:00 with no regular holidays, available until late at night. There is an old ticket machine outside the shop, but it is currently not in use; guests are instructed to use the touch-panel ticket machine inside. It is relatively less crowded after 21:00, making it easy to use for a late-night ramen after drinks.
2Purchasing meal tickets
Purchase meal tickets using the touch-panel ticket machine inside the shop, which operates on a pre-purchase system. It's easy to operate with pictures, but there is no English display. Signature items include "Shiraito," a refreshing light salt chukasoba for 1000 yen, "Kuroito," a richer tonkotsu series, flavored egg toppings, and omori (large size) portions. Payments accepted include cash, credit cards (VISA/Master/JCB/AMEX), QR code payment (PayPay), and all transportation e-money.
3Seating and receiving
There are only 8 counter seats. Guests sit at an available seat and hand their meal ticket to the staff. Service is quick, taking 3-5 minutes, and guests are guided smoothly even during busy times.
4Other
The soup is a carefully prepared blend of chicken bones from Aichi Prefecture and pork bones from Kagoshima Prefecture, combined with a tare (sauce) made from Kumamoto Prefecture clams and Ise white soy sauce, offering a powerful umami despite its clear appearance. The noodles are thin, straight noodles made from "Arashi Musha" wheat, specialized for chuka-men, with added whole wheat flour, characterized by their chewiness and wheat aroma. Toppings include two types of chashu (pork and chicken; chicken is moist from low-temperature cooking), fried lotus root, kaiware (daikon sprouts), green onions. A 3-type chashu option is also available. The crispy texture of the fried lotus root enhances the perfection of the dish.
