Chukasoba Izuru is a renowned niboshi (dried sardine) ramen shop quietly nestled in a narrow alley in Shibadaimon. The owner, who trained at the popular Ebisu shop "Ozeki Chukasoba-ten," became independent in January 2017 and was recognized as a Tabelog Hyakumeiten (Top 100 Shops) in 2018. There are two signature systems: one is the "Niboshi Soba" (1,000 yen), which has a distinct niboshi aroma without any off-flavors. While highlighting the umami and fragrance of niboshi, its saltiness is subdued, resulting in an elegant finish that's easy to drink to the last drop. The other is the "Noko Soba" (1,050 yen), a thick, rich broth reminiscent of Tenkaippin's "kotteri" style, an intense bowl that aggressively brings out the niboshi flavor. 1Before Entering
Located in an alley, a 2-minute walk from Daimon Station A6 exit (Toei Mita Line/Oedo Line) or a 5-minute walk from Hamamatsucho Station North exit (JR). Open only on weekdays, in two shifts: 11:00-14:00 and 17:30-20:30. Closed on Saturdays and Sundays. Public holidays may be open, so checking the official X (@nibosi_izuru) beforehand is recommended. During the lunch peak (12:00-13:00), there are regularly 5-10 people waiting outside, with a turnover of 5-10 minutes. It's relatively easier to enter after 13:30.
2Purchasing Tickets and Ordering
Purchase a ticket from the vending machine located next to the shop entrance, then join the queue. The signature items are Niboshi Soba (1,000 yen) and the thick Noko Soba (1,050 yen). Choosing "Tokusei" (Special) adds a flavored egg, more char siu, and extra chopped onions (Tokusei Niboshi Soba costs 1,300 yen). For Aedama (350 yen), choose "thick noodles" or "thin noodles" when it's served. Payment methods include cash, QR payment (PayPay, etc.), and credit cards (electronic money is not accepted).
3Seating and Receiving
There are 9 seats in total: 7 counter seats and 2 table seats. Place your meal ticket at the entrance and sit at an available seat. Service is quick, taking about 5-10 minutes from order to serving. The shop is small, and there are unique rules such as keeping your bag on your lap and placing used dishes on the counter after eating, so check upon entry.
4Other Tips
There are no specific condiments on the table to adjust the flavor; the ramen is meant to be enjoyed as a complete dish from the first bite. Noko Soba can sometimes feel a bit monotonous in saltiness in the later half, so if that happens, adding Aedama to the soup creates a new balance. Dissolving rock seaweed into the soup further complexifies the flavor. The shop recommends trying the regular Niboshi Soba first before attempting the Noko Soba.
