Chukasoba Kanade
中華そば かなで
Overview
A street-level shop in Higashi-Hie, Hakata Ward, Fukuoka City, located within walking distance from Hakata Station, specializing in chuka soba made without chemical seasonings. It's part of a group with 'Kanade Shokudo' in Kasuga City as its main branch, offering a 'gentle chuka soba' option in a region dominated by Hakata tonkotsu ramen. The signature dishes are chuka soba (soy sauce flavor) and shio soba (salt flavor), forming two main pillars. The clear soup, a blend of chicken bones and seafood, has a transparent finish free of impurities. The shio soba offers a subtle, gentle sweetness from chicken paitan and seafood, while the shoyu soba delivers an elegant soy sauce flavor that embodies the 'aesthetics of subtraction'. The homemade noodles are medium-thin, straight, and high-hydration, with a smooth yet firm texture that absorbs the soup well. The chashu is made from vacuum-sealed low-temperature cooked pork shoulder loin, thinly seasoned and moist, a popular item on par with the signature ramen. Side dishes are diverse, including small rice, tamago kake gohan, roasted tomato don, and beef tendon curry. A common way to finish the meal is by adding white rice to the leftover soup, creating a zosui-style dish. Limited-time menus include 'Noodle Gurry,' an homage to cup noodles, ginger-scented nira soba, and soupless tantanmen, among others, known as a constantly evolving shop. The shop's unique custom is to add a few drops of the concentrated Pu-erh tea available on the table to water and drink it, which instantly refreshes the palate after the meal. A bowl where you can slowly savor the 'umami of subtraction' – the deliciousness achieved without chemical seasonings – at your own pace.

1Before entering
Located about a 5-minute walk from Exit 4 of Higashi-Hie Station on the Subway Kuko Line, and also within walking distance from Hakata Station. There are 3 parking spaces in front of the shop, making it accessible by car. During weekday lunch peak hours (12 PM - 1 PM), queues often form outside. On weekends or for late lunch before 2 PM, there can be a 10-20 minute wait. Closed on Tuesdays. Last order is at 10:00 PM, and the shop closes at 10:30 PM, offering flexibility for evening visits.
2Purchase meal ticket / Order
There is a touch-panel ticket vending machine with photos at the shop entrance, making it easy to choose even for first-time visitors. The menu primarily features Chuka Soba (Soy Sauce) 930 yen and Shio Soba, along with Special, seasonal specials (like Noodle Gurry, Ginger-Scented Nira Soba), Soupless Tantamen, and sides such as Tamago Kake Gohan and Roasted Tomato Don. Payment is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating / Receiving your order
There are 20 seats in total: 8 at the counter and 12 at tables. Staff will guide you to an available seat. Orders are typically served within 5-10 minutes.
4Other
The concentrated Puerh tea on the table is for palate cleansing; add a few drops to your water. A shop sign clearly states, "We do not offer kata (firm) or barikata (very firm) noodles." There are no noodle hardness preferences or kaedama (extra noodle). If you want a hearty meal, choose omori (large size) or add white rice to make a zosui-style finish with the leftover soup. The low-temperature cooked chashu tends to harden slightly over time, so enjoy its tenderness by eating it first.
