Established in 1956, this venerable Chukasoba shop in Ginza retains its Showa-era charm, attracting a blend of local regulars and international tourists. It's conveniently located next to WINS Ginza off-track betting facility, nestled between Ginza-Itchome and Ginza stations. The signature dish is the Chukasoba (850 yen). Its clear shoyu (soy sauce) soup, crafted from a layered broth of chicken bones and niboshi (dried sardines), offers a deep, flavorful taste that surprisingly exceeds its appearance, making you want to savor every last drop. The noodles are medium-thick, straight, and round, boasting a pleasant soft texture and wheat aroma. A free topping of seabura (pork back fat) can be added, perfect for those who desire extra richness in their soup. The cozy interior offers only a small counter and two four-person tables; during busy periods, table seating may be communal. The ordering system is unique: despite a ticket machine at the entrance, staff predominantly take verbal orders from customers at the front of the queue, accept cash, and purchase the meal tickets on their behalf. 1Before Entering
A street-level shop located near Chuo-dori, a 4-minute walk from Ginza-itchome Station and 3 minutes from Ginza Station, right next to WINS Ginza (off-track betting facility). Open Monday, Tuesday, Thursday, Friday from 11:00 to 17:30, and Saturday from 11:00 to 16:00. Closed on Wednesday, Sunday, and national holidays. It operates continuously without a midday break, and on weekdays around 12:00 PM, a line of 5 to 10 people often forms. The turnover is fast, and after 1:00 PM on weekdays, there are times you can enter without waiting. Temporary closures are announced on Instagram (@ginza.kyouraku), so it's safe to check in advance along with the regular closing days.
2Purchasing Tickets and Ordering
There is a ticket machine at the entrance, but when there's a line, a unique system is established where staff take orders verbally from customers in order, collect cash, and purchase tickets on their behalf. It's smoother if you decide what to order while waiting in line. For a first visit, the signature Chuka Soba (850 yen) or Wontonmen (1,050 yen) are recommended. If you want more meat, the Chashu Wontonmen (1,350-1,400 yen) is a good choice. For mentma lovers, Takenoko Soba (Bamboo Shoot Soba) is clear. Adding 背脂 (abura - back fat) is free and can be added on top when serving. Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and Receiving
A total of 17 seats: 9 at the counter and 2 four-person tables. Staff will guide you to an empty seat; during busy times, table seats may be shared. There are no luggage racks or coat hangers, so you'll need to keep your jacket and bag on your lap. Service is fast, taking around 5-7 minutes.

On the table, you'll find pepper, vinegar, chili oil, etc. Since the soup is a clear soy sauce base, a modest flavor change is recommended, but a splash of vinegar in the latter half changes its character. Eating by adding a raw egg and dissolving it in the soup is another option. While there are no rice dishes, the meaty texture of the pork wontons alone provides satisfaction. The previous owner might sometimes say 'Thank you for cleaning the bowl so nicely!' after you finish, adding to the warm, old-town atmosphere of the shop.
