Chukasoba Sankai
中華そば三戒
Overview
A specialist ramen shop for "shime ramen" (ramen eaten after drinking), tucked away in the back of the first floor of a multi-tenant building in Nishiki, Nagoya, operating from evening until 2 AM. Located in an entertainment district just a 6-minute walk from Sakae Station, and with its operating hours from 6 PM to late night, it has been a local favorite for many years, serving as "the perfect bowl after a drink" for businesspeople and tourists returning from a night out. The signature dishes are Shoyu Chuka (soy sauce Chinese-style ramen) for 950 yen and Shio Chuka (salt Chinese-style ramen), both featuring a clear, light soup. Despite their simple appearance, the rich aroma and umami of bonito flakes are prominently featured. The thin, wavy noodles entwine well with the soup, allowing for smooth slurping. A unique menu item, "Shio-Shoyu Chukasoba" (salt and soy sauce blend Chinese-style ramen) for 1,100 yen, is also available. Standard toppings include chashu, menma, naruto, and green onions, but the "All Toppings" version elevates the signature dish by including two types of chashu: thin-sliced and hearty. Unusually for salt ramen, yuzu kosho (citrus chili paste) is provided, and the shop's style is to enjoy it by adding it to the ramen like wasabi for a flavor change. A half size for 750 yen is also available, catering to those with smaller appetites or for a second stop. Side dishes like rice topped generously with bonito flakes, gyoza, fried rice (available until 9 PM), and almond tofu for dessert after ramen, are offered in perfect portions and prices for late-night cravings, capturing the hearts of repeat customers. The friendly and straightforward proprietress's hospitality is also a highlight, creating a warm atmosphere that welcomes both regulars and first-time visitors alike.
How to Order
1Before Entering the Shop
Located at the back of the first floor of a multi-tenant building in Nishiki 3-chome, a 6-minute walk from Sakae Station. The signboard and entrance are discreet, making it a bit difficult to find for first-time visitors. It operates only in the evenings from 6 PM until 2 AM (last order at 1:30 AM), closed on Sundays and public holidays. Although it's a popular spot in a drinking district with many regulars, it has a welcoming atmosphere for newcomers. It can get crowded with customers returning from drinks between 8 PM and 11 PM, tending to become quieter later in the night.
2Ordering
There is no ticket vending machine; after entering, take a seat at the counter or a table and verbally order from the proprietress. Signature items include Shoyu Chuka (950 yen), Shio Chuka, Shio-Shoyu Chukasoba (1,100 yen), various "All Toppings" versions, and half-size noodles (750 yen). Evening set menus include the Chukasoba Set (1,100 yen) which comes with either rice or almond tofu. You can also add extra large noodles (150 yen) or large rice (380 yen). Side dishes like gyoza, fried rice (until 9 PM), and alcoholic beverages like highballs are also available. Payment is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating and Receiving Your Order
After entering, follow the proprietress's guidance to an available seat. It's a small shop with a total of 12 seats: 6 at the counter and 2 tables. Solo diners are often directed to the counter, while groups are seated at tables. Service is very quick, taking only 4-5 minutes, offering the speed expected of a "shime ramen" spot.
4Other Notes
Yuzu kosho is served with the salt ramen, and the shop recommends enjoying it by adding it to the noodles like wasabi for a change in flavor. For the light soup, adding plenty of pepper enhances its punch. If you order rice, it's customary for locals to top it generously with bonito flakes, then mix it with soup and pepper. When leaving, settle your bill at the counter and depart smoothly for the next customers.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.
