Chuka Soba and Gyoza, located a short walk from the Shiba-Daimon intersection towards Shinbashi, is a simple ramen shop that, as its name suggests, specializes in Chuka Soba and grilled gyoza. Its signature dish combines homemade medium-thin straight noodles made from Hokkaido wheat with a clear soy-based soup, delicately layered with seafood notes over a chicken and pork clear broth. The shop sign bears the catchphrase "Jinwari-kei Chuka Soba" (Heartwarming Chuka Soba). The soy sauce is not sharp, but clean and mellow, with subtle sweetness, acidity, and a complex umami reminiscent of shellfish broth, making it a classic bowl. Opting for the "Tokusei" (Special) version provides a satisfying topping configuration with 3-4 larger slices of chashu, a flavored egg (ajitama), bamboo shoots (menma), and chopped green onions. These are large gyoza packed with coarsely ground meat, featuring a delightful two-stage texture of crispy yet chewy skin. On the table, you'll find sansho chili pepper (kuro shichimi), freshly ground pepper, vinegar, and chili oil; adding a small amount of vinegar or kuro shichimi later in the meal enhances the flavor. The cozy interior has only 8 counter seats, and the gentle, courteous service from the female staff is one reason for its enduring popularity. Closed on Saturdays, open only for lunch on Sundays.
How to Order
1Before Entry
About a 3-4 minute walk from Daimon Station on the Toei Mita Line or Oedo Line. Operating hours are a two-part system on weekdays: 11:30-14:00 and 18:00-21:00. On Sundays, it's open for lunch only from 11:30-14:00, and closed on Saturdays. During lunch peak (12:00-13:00) and evening (19:00-20:00), there may be a wait of 4-10 people, but the turnover is fast, so you can often enter in 5-10 minutes. It's relatively easier to enter right after opening at 11:30, around 14:00, or right after opening at 19:00.
2Purchase Meal Tickets and Order
Upon entering, purchase meal tickets from the vending machine on the right. It has photos, making it easy to understand even for first-time visitors. Signature items are Chuka Soba (800 yen), Ajitama Chuka Soba (950 yen), and Tokusei Chuka Soba (1,050 yen, includes 3-4 slices of chashu + flavored egg + menma). Side gyoza can be chosen as 6 pieces (500 yen) or a half size of 3 pieces (260 yen). Half rice and regular rice are also available. Payment is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating and Receiving Your Order
There are only 8 J-shaped counter seats, with two female staff members. Take a seat at a partition-separated spot and place your meal ticket on the counter. It takes about 5-8 minutes from order to serving. Gyoza are served with two types of sauce (shoyu-rayu and su-kosho).
4Other Notes
On the table, you'll find individually wrapped wet wipes, sansho chili pepper (kuro shichimi), chili oil, vinegar, soy sauce, and freshly ground pepper. For Chuka Soba, sprinkling kuro shichimi later adds a sansho and spicy accent, while a small amount of vinegar deepens the flavor. For gyoza, trying both sauces allows you to enjoy the difference. After finishing the noodles, it's also recommended to pour a little leftover soup over rice for a "soup chazuke" style dish.
