Crab Taifu
crab台風。
Overview
A crab x tonkotsu (pork bone) ramen shop located two minutes walk from JR Kamata Station, along Kamata Bourbon Road. This unique establishment has garnered long-standing support since its days operating in Ningyocho. It has a distinctive history, having been a popular shop with long queues along Kyo-do Insatsu-dori before moving from Ningyocho to Kamata, forging its own path. The signature dish is the Kani Soba (crab ramen) for 960 yen. The crab x tonkotsu soup is a rich, potage-like consistency, with the profound aroma of crab bursting forth from the very first bite. While rich and oily, it has a subdued fishy smell and greasiness, and is crafted to offer an elegant sweetness. The soup has a strong reddish hue, and is characterized by a visually striking array of colors: pink rare chashu (braised pork), vermillion momiji oroshi (spicy grated daikon), black hozaki menma (bamboo shoots) and nori (seaweed), and white chopped onions and egg. The noodles are straight, thin, low-hydration noodles from Kanejin Shokuhin, offering a crisp, snappy texture. Their sharp preparation, with a boiling time of 1 minute 20 seconds, allows them to perfectly entwine with the soup. The chashu consists of three thin slices of pork shoulder loin, slow-cooked at a low temperature. Its rare texture, so rare that its color changes from the heat of the soup, is a signature appeal. The Ae-dama (seasoned extra noodles) is 300 yen (half size 220 yen) and is a blend of crab miso, crab oil, and niboshi (dried sardines), with the aroma of katsuobushi (bonito flakes) wafting up. It's substantial with chopped green onions and diced chashu. It can be enjoyed as a crab pasta dish on its own, and a popular way to enjoy it twice is to add it to the leftover soup later, transforming it into a tsukemen (dipping noodles) style dish. Variations include Spicy Kani Soba (spiciness + crab), Kani Niboshi Soba (crab x niboshi blend), and limited-time seasonal menus (such as mentaiko butter). On the table, you'll find grated garlic, niboshi (dried sardines) vinegar, ichimi (chili powder), and pepper, allowing you to customize the flavor. The shop has a compact layout with only 10 L-shaped counter seats. The interior is chic and based on black, with a clean and stylish atmosphere, often frequented by female customers. The interior is well-maintained, with thoughtful details such as paper aprons and tissues on the counter. The restroom is on the second floor. Business hours are Monday-Saturday 11:30-14:30 / 17:30-22:00, closed on Sundays.

1Before entering the shop
A crab and tonkotsu ramen shop located on Kamata Bourbon Road, a 2-minute walk from JR Kamata Station. It was originally a popular shop in Ningyocho and moved to Kamata after a period of long queues along Kyodo Insatsu Dori. Operating hours are Mon-Sat 11:30-14:30 / 17:30-22:00 (with a break in between), closed on Sundays. It's a compact shop with only 10 L-shaped counter seats, and it tends to be full or have a short queue on weekdays during 12-13 PM and on weekends until 2:30 PM, when lunch service ends. On weekday evenings, there might be a few customers and no queue around 7 PM, and it's easier to enter before 10 PM. There have been instances of early closing due to sold-out soup, so it's safer to confirm before visiting.
2Purchasing meal tickets and ordering
Buy your meal ticket from the vending machine on the right side of the shop. The vending machine accepts cash only; QR code payments, e-money, and credit cards are not accepted. The signature dish is Kani Soba (Crab Soba) for 960 yen (rich crab x tonkotsu soup), allowing you to enjoy the rich crab flavor for under 1000 yen. Variations include Kara Kani Soba (Spicy Crab Soba, spicy + crab), Kani Niboshi Soba (Crab x Dried Sardine blend), and seasonal limited menus (such as Mentaiko Butter). Aedama (seasoned extra noodles) options are Kani Miso & Crab Oil & Niboshi Aedama for 300 yen, and Half Aedama for 220 yen, popular as a second enjoyment later in the meal. Toppings include Half Meat Increase for 250 yen, Ajitama (seasoned egg) for 150 yen, Onion for 130 yen, and additional Kani Miso (crab miso).
The operation when there is a queue is fluid, so it's safer to observe the end of the line and decide whether to join the queue or buy a meal ticket first.
3Seating and receiving your order
Take an available seat at the L-shaped counter (10 seats) and hand over your meal ticket. Service is speedy, generally 4-7 minutes until your order is served, including the 1 minute 20 seconds noodle boiling time. Thoughtful details such as paper aprons and tissues on the counter are provided. The restroom is on the second floor.
4Other information
The soup is a rich, potage-like preparation of crab x tonkotsu, with the orange aroma of crab spreading robustly from the first sip. Despite being rich and oily, it has subtle fishiness and heaviness, and an elegant sweetness can be felt. The noodles are thin, straight, low-hydration noodles from Kanejin Shokuhin, with a firm, "patsupatsu" texture. The chashu (roast pork) is thinly sliced pork shoulder loin cooked at a low temperature, so rare that its color changes from the heat of the soup. It's colorfully arranged with hosaki menma (bamboo shoots), chopped onions, momiji oroshi (grated daikon with chili), and nori (seaweed). Grated garlic, niboshi vinegar, ichimi (chili powder), and pepper are available on the counter for flavor changes. The Aedama is seasoned with crab miso and can be enjoyed as is, like crab pasta, or later added to the soup like tsukemen for a popular dual enjoyment.
