Overview
Fuse Hosomi Shoten is a popular miso ramen shop near Fuse Station in Higashiosaka, Osaka, and has been selected as one of the Top 100 Ramen Shops in Osaka. Its signature dish is the "Kin no Mugimiso Ramen" (Golden Barley Miso Ramen), a name that the shop has uniquely trademarked. The soup, made with barley miso from the owner's hometown of Ehime, combines with chicken and pork animal-based broth, characterized by a rich aroma, a subtle sweetness, and a deep umami. Unlike the saltier Hokkaido-style miso ramen, it is rich yet not heavy, and is highly praised for its mellow taste that makes you want to drink it all the way to the end. The noodles are medium-thick and chewy noodles from Kyoto's Menya Teigoku, which pair well with the miso soup. The toppings are colorful, including two types of chashu, hosaki menma (bamboo shoot tips), shredded leek, chopped onion, mizuna (Japanese mustard greens), and shredded chili pepper. In addition to Kin no Mugimiso, the menu is diverse, featuring chicken tonkotsu ramen, "Fuse Black" shoyu ramen, spicy miso ramen, Chuka Soba (Chinese-style ramen), various tsukemen (dipping noodles), and seasonal cold ramen. Spicy levels can be gradually increased. Sides are also substantial, such as the Chashu-don (braised pork rice bowl) topped with small pieces of chashu.

1Before entering
Located about a 2-minute walk from Kintetsu Fuse Station. It's a small shop with an L-shaped counter and two tables. During peak lunch and dinner hours, there might be a few groups waiting, but the turnover is relatively fast. The shop is closed on Mondays (even if it's a holiday). Note that it operates in two shifts, day and night, so it closes during the interim period (around 3 PM to 6 PM).
2Buying a ticket / ordering
The system requires you to first purchase a meal ticket from the vending machine at the entrance before taking a seat. If there is a line, purchase your ticket first, then join the queue. The ticket vending machine supports English, and the signature Kin no Mugimiso Ramen is often located at the top left of the machine. Spicy miso (karamiso) can be chosen from 1 to 5 kara (spicy level), and can be further increased gradually up to a maximum of 20 kara (spicy level). Payment is cash only; cards, e-money, and QR payments are not accepted.
3Seating / receiving
The owner or staff will guide you to a counter or table seat, where you hand over your meal ticket. The estimated waiting time for your order is about 5 minutes. The service is friendly, creating an atmosphere where even solo diners can feel comfortable.
4Other tips
With many options besides miso, such as chicken tonkotsu, Fuse Black, Chuka Soba, and various tsukemen, the signature Kin no Mugimiso Ramen is recommended for your first visit. Since the soup is rich, one enjoyable way to eat is to pair it with a rice bowl like Chashu-don, and then pour the remaining soup over it at the end.
