Gankomen
頑固麺
Overview
Gankomen is a specialty shop for super rich chicken and pork bone ramen, located in Fukakusa, Fushimi-ku, Kyoto, a 7-minute walk from Keihan Main Line Fujinomori Station. Boasting one of the top-class richness levels among Kyoto ramen, its signature is a popular pottage-like Paitan (creamy white soup) made by simmering chicken and pork bones to the extreme. The signature Chicken and Pork Bone Ramen (1050 yen) is dense with a subtle grainy texture, yet surprisingly lacks any strong smell or heaviness, offering a uniquely balanced and clean aftertaste. The Niboshi (dried sardine) Chicken and Pork Bone Ramen (1050 yen) combines the aromatic savoriness of plenty of fish powder with the ultra-rich Koku (richness/umami) of the chicken and pork bone broth, structured with a crisp Shoyu (soy sauce) saltiness that adds depth to the soup. The noodles are medium straight "Wing Noodles" from Kyoto's renowned "Menya Teigaku," forming a powerful combination with their chewy elasticity and smooth texture that perfectly carries the rich soup. Standard toppings include a large rare Chashu (braised pork slices – moist finish with a good balance of lean and fat pork shoulder loin), the sweetness and crisp texture of onions, crunchy Menma (seasoned bamboo shoots), chopped green onions, and more onions hidden underneath. Additionally, limited edition menus frequently appear, such as SPICE Hot Curry Noodles (pork Paitan curry soup + Wing Noodles + pork belly + rare Chashu), Toro-Niku Stamina Miso Chuka Soba, Tokushima-style Ramen, Akai Suisei (Mala Miso), and Summer Training Camp Soupless Curry, ensuring repeat customers are always engaged. As a spin-off of the signature ramen, the Toro-Niku Shoyu Tsukemen (dipping noodles) is designed to let you enjoy the aroma of stamina oil, making the noodles satisfying on their own, along with a Shoyu-based, animal-derived umami dipping soup. The classic way to finish is to 'dive' rice into the dipping soup. The shop also offers a variety of rice bowls to pair with your ramen, including the Toro-Niku Don, Ra-yu Gohan (chili oil rice), and mini bowls. You can also alter the flavor with table vinegar, a beloved enjoyment for repeat customers towards the end of their meal. Open only for lunch and closed on Mondays, Gankomen is an indispensable shop when discussing rich-style Kyoto ramen, with constant queues.

1Before Entering
A specialty shop for super rich chicken and pork bone ramen, located at Castle Fukakusa 1F, 6-62 Fukakusa Nishiuracho, Fushimi Ward, Kyoto City, Kyoto Prefecture, a 7-minute walk from Fujinomori Station on the Keihan Main Line. Open only for lunch from 11:00 to 14:00, closed on Mondays. There is no free parking, so nearby coin-operated parking lots must be used. It is a popular shop where queues are established even before opening; on Tuesdays at 11:00, there are about 3 customers ahead, and on weekdays at 13:30, it can be full with a wait outside. Waiting times can more than double on snowy or bad weather days.
2Purchasing Meal Tickets
There is a ticket vending machine at the shop entrance, and the system is to purchase meal tickets first, then join the queue. To avoid disrupting the order of purchase, it is customary to always buy meal tickets before joining the queue. Signature items include Chicken Tonkotsu for 1050 yen, Niboshi Chicken Tonkotsu for 1050 yen, Sebura Shoyu MAZESOBA [with finishing rice], limited SPICE Yu Curry Noodles for 1300 yen, Toro-niku Shoyu Tsukemen, Toro-niku Don, Rice (medium) for 180 yen, and Ra-yu Gohan (Chili Oil Rice). Limited-time menus appear frequently and are announced via the shop's SNS stories. Payment is cash only at the vending machine.
3Seating and Receiving Your Order
The shop primarily features counter seating (around 9 seats), and staff will guide you to an empty spot. Orders are served within approximately 5-8 minutes.
4Other Information
The signature Chicken Tonkotsu features a rich, potage-like Paitan (white broth) soup made by simmering chicken and pork bones to their absolute limit. It is intensely thick with a grainy texture yet surprisingly lacks any strong odor or heaviness, leaving a refreshing aftertaste. The Niboshi Chicken Tonkotsu combines the aromatic savoriness of Niboshi (dried sardines) — which uses plenty of fish powder — with the rich depth of chicken and pork bone, enhanced by a sharp soy sauce saltiness that adds thickness. The noodles are medium straight noodles (Wing noodles) from Kyoto's renowned “Menya Teigoku,” offering a chewy elasticity and smooth texture that perfectly complements the rich soup. Standard toppings include large rare char siu (pork shoulder loin with a good balance of lean and fat, finished moist), sweet onions, crunchy menma (bamboo shoots), chopped green onions, and back fat. Tsukemen also has limited editions with toro-niku (fatty pork) and back fat, and you can enjoy additional toppings like ajitama (seasoned egg) and shime-meshi (finishing rice, for dipping into the remaining soup). You can also enjoy changing the flavor with a touch of vinegar from the table.
