While its main store is in front of Hakata Station, this branch inside the station is a popular stop for a meal after a business trip or as a first taste of Hakata for travelers upon arrival. The signature ramen features a classic style with a rich, impactful Hakata Tonkotsu soup paired with characteristic Hakata ultra-thin straight noodles. Prepared with a float of back fat (seabura), it boasts a visual richness and punch, yet the ultra-thin noodles ensure you can slurp it down smoothly to the last drop. The chashu (roast pork) is tender but retains some chewiness, with the pork's umami spreading with every bite. 1Before entering
Located in "Hakata Men-kaido" on the 2nd floor of JR Hakata Station's Deitos, directly connected to the Shinkansen "Hikari Hiroba-guchi" entrance, this shop boasts an excellent location, just 134m from the station. Open continuously from 10:00-23:00 (L.O. 22:30), with closing days subject to Hakata Men-kaido's schedule. Due to its location on a tourist route, lines easily form during lunchtime, with a known instance of a 30-minute wait around 1 PM on a Saturday. It gets especially crowded before and after Shinkansen arrivals/departures. It's relatively easier to enter late at night (around 10 PM), early morning (around 10 AM), or during odd hours after 1 PM on weekdays. Temporary closures are announced on the official Instagram (@ganso.hakatadaruma).
2Purchase meal tickets and order
It's a "buy first" system where you purchase meal tickets at the vending machine in front of the store and then join the back of the line. A unique system at this shop is that while you are waiting in line, a staff member will collect your ticket stub and take your order in advance (a mechanism to speed up service by sending orders to the kitchen before you are seated). Noodle firmness (barikata (very firm) / katame (firm) / futsu (regular) / yawa (soft)) will be asked by staff when you hand over your ticket stub or when you are seated. Signature dishes include Ramen, Ajitama Ramen for 1000 yen, Mentaiko Don Set for 1200 yen, Marutoku Set for 1500 yen, and Daruma Hakata Set for 1500 yen. Various payment methods are accepted: cash, credit cards (VISA, Master, JCB, AMEX, Diners), transportation IC cards, and PayPay.
3Seating and receiving
There are 25 seats in total, combining counter and table seats, accommodating groups as well. The rapid turnover is managed by guiding customers to fill seats efficiently. Since the ramen is pre-ordered, it is served quickly after seating (a few minutes to 10 minutes).
4Others
Condiments are generally not placed on the tables, so if you want beni shoga (red pickled ginger), please ask a staff member. Kaedama (extra noodle) costs 300 yen and can be ordered from your seat. The Mentaiko Don is a simple dish with mentaiko, shio konbu, green onions, and bonito flakes, and many regulars enjoy the "infinite loop" of eating it alternately with ramen. As it's close to the Shinkansen ticket gate, it's reassuring to dine while keeping an eye on your train's departure time.
