Ginza Genraku Ginza is a se-abura shoyu ramen (pork back fat soy sauce ramen) shop located on the first floor of Maruyama Building, just a minute's walk from Higashi-Ginza Station, behind the Ginza 4-chome intersection. This establishment is a noren-wake (branch) from the main store in Kuramae, Taito-ku, extending Tokyo's lineage of se-abura chatcha-kei (a ramen style characterized by vigorously sprinkling pork back fat) to Ginza and Shinbashi. A popular set meal (1,200 yen) combines the ramen with "Han Buta-meshi" (half pork rice), which consists of diced chashu, green onions, and nori over rice. The menu also offers the salt-based "Raku Ramen," tsukemen (dipping noodles), warm tsukemen, chashu-men (chashu ramen), and various additional toppings. A wide array of tabletop condiments – including special sauce, sesame oil, ground sesame, ichimi chili powder, grated garlic, spicy sauce, pepper, and tobanjan chili bean paste – allows for extensive ajien (flavor alteration). The counter seats are equipped with Ichiran-style partitions, making it an established spot for focused, solo dining.
How to Order
1Before Entering
Located on the 1st floor of Maruyama Building along Showa-dori, behind the Ginza 4-chome intersection, a 1-minute walk from Higashi-Ginza Station. It's about a 2-minute walk from Kabuki-za. During peak hours (around 12 PM for lunch, around 9 PM for dinner), it's often full, but the turnover is quick, and there's rarely a long wait outside, typically 0-10 minutes until entry. It tends to be less crowded after 1 PM on weekdays or late at night. Business hours are Mon-Tue, Thu-Fri 11:00-23:00, Wed 11:00-22:30, Sat-Sun, holidays 11:00-20:00. Closed during Obon and New Year holidays.
2Purchase Meal Ticket & Order
Purchase your meal ticket at the ticket machine next to the entrance. The machine has no photos or English display, only kanji menus, but a separate paper English menu is available. Choose from signature "Gen Ramen" 850 yen (pork back fat soy sauce), "Raku Ramen" (pork back fat salt), "Half Pork Rice Set" 1,200 yen, warm tsukemen, tsukemen, Chashu Ramen 1,250 yen, large noodles (oomori) 120 yen, and various toppings. After purchasing your ticket and seating yourself, a staff member will come to collect it. At this time, you can verbally customize your order, for example, by asking for "more pork back fat" (seabura oome), "firm noodles" (men katame), or "more green onions" (negi oome). If you say nothing, it will be served as default (softer noodles, standard amount of pork back fat). Payment at the ticket machine is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating & Receiving
There are a total of 15 seats: 11 counter seats (with Ichiran-style partitions) and 1 four-person table. A staff member will guide you to an empty seat; paper aprons and water are self-serve. Your ramen will be served quickly, in 3-5 minutes.

The tables are equipped with a rich selection of condiments: tare (sauce), sesame oil, ground sesame, ichimi (chili powder), grated garlic (ninniku oroshi), spicy sauce, pepper, and gochujang. The table tare allows you to adjust the richness of your soup yourself; as a thinner broth is standard, it's common to add tare midway if the default isn't rich enough for your liking. The "Half Pork Rice" side dish is known for the combination of ramen fat and rice, and a popular way to finish is by adding soup and egg at the end.

粒の細かい背脂が降り積もったスープは、背脂の香りと甘みがなかなか好みで、カエシの際立つ甘さやらも満足度を上昇させててうまい😍
