Ginza Hachigou
銀座 八五
Overview
Ginza Hachigou is a "Ramen Dining" establishment that redefines the concept of ramen, located on the 1st floor of Daiichi Hanabusa Building in Ginza 3-chome, just a 3-minute walk from Higashi-Ginza and Shintomicho Stations, or a 10-minute walk from JR Yurakucho Station. Though relatively new, having opened on December 8, 2018, it quickly gained recognition, earning a Michelin Guide Tokyo Bib Gourmand in its inaugural year (2019). Since then, it has received a Michelin Tokyo One Star for three consecutive years (2021-2023), followed by a Bib Gourmand listing for three consecutive years (2024-2026), and has been selected for the Ramen TOKYO Hyakumeiten (百名店 - Top 100 Shops) for seven consecutive years (2019-2025), establishing itself as a world-renowned, premier ramen destination in Ginza. Each bowl, crafted by Chef Yasushi Matsumura, who hails from a French culinary background, is uniquely composed without the use of any soy sauce (shoyu) or salt-based tare (tare - seasoning base). Instead, its flavor is meticulously developed with prosciutto and Guerande salt, added to a dashi (出汁 - broth) carefully simmered from ingredients like Barbary duck, Nagoya Cochin chicken, scallop, dried tomatoes, roasted mushrooms, kombu (昆布 - kelp), green onions, and aromatic vegetables. The transparent, amber-colored soup boasts a rich umami (旨味 - savory taste) and a multi-layered dashi depth, reminiscent of a French consommé, achieving a perfection that makes you want to savor every last drop. The noodles are custom-made medium-hydration, straight, medium-thin noodles from Asakusa Kaikaro, praised for their supple slurpability and excellent bite. Toppings include thick-cut domestic pork chashu (チャーシュー - braised pork belly) with skin, roasted in a salamander, three thick menma (メンマ - seasoned bamboo shoots), ajitama (味玉 - seasoned soft-boiled egg), Kujo green onions, and a final sprinkling of wild pepper (Pepper Caviar) milled on top. Signature dishes include "Chuka Soba" (中華そば - classic ramen) for 1,200 yen, "Special Chuka Soba" for 1,600 yen, and "Ravioli Gourmandise Chuka Soba" for 2,200 yen (limited to 30 servings, featuring truffle and foie gras ravioli). A popular side is "Niku Gohan" (肉ご飯 - meat rice) for 500 yen, a simple yet satisfying dish of wasabi, horseradish, unseasoned chashu, and rice. The recommended way to enjoy it is to pour the ramen soup over it, Himatsubushi (ひつまぶし - Nagoya-style eel rice) style, at the end. The restaurant offers a refined and intimate dining experience in a dignified space with only 6 counter seats, evoking the focused atmosphere of a small kappo (割烹 - traditional Japanese restaurant, usually counter-style) or sushi establishment.
How to Order
(Check the official account below in advance for irregular closures and updates)
Official SNS:https://www.instagram.com/ginza_hachigou/
1Before Entering
Located a 3-minute walk from Higashi-Ginza Station / Shintomicho Station, this is a street-level shop in Ginza 3-chome. Business hours are short, Tuesday-Sunday 11:00-16:00. Closed on Mondays, and irregular closures on Tuesdays (please check the official Instagram for the latest information). There are two entry methods: (1) Morning queue slot: Registration starts around 10:30 AM on a first-come, first-served basis, closing after approximately 17-19 people, with actual opening at 11:00 AM (sometimes brought forward to around 10:20 AM). (2) TableCheck reservation: Reservation slots for 12:00 PM onwards for the following week's business days open every Saturday at 9:00 AM and are instantly filled (reservation fee 500 yen). For those in the queue, arriving around 8:00 AM usually secures the first spot; around 9:00 AM, there are typically 6-9 people; and around 9:20 AM, it reaches approximately 14 people. Since they close once the soup runs out, queuing in the morning is the only option if you want to eat for sure.
2Purchasing Meal Tickets and Ordering
Once guided inside in order of arrival, purchase meal tickets at the ticket machine near the entrance. The ticket machine has photos and English explanations, making it easy to use. Reserved customers are handed a menu by staff outside, confirm their order, and then guided inside. Signature dishes include "Chuka Soba" 1,200 yen, "Ajitama Chuka Soba" 1,400 yen, "Special Chuka Soba" 1,600 yen (2 slices of chashu + ajitama), and "Ravioli Gourmandise Chuka Soba" 2,200 yen (limited to 30 servings, with truffle and foie gras ravioli). Side dishes like "Niku Gohan" (meat rice) 500 yen and cold-brew Hojicha are also purchased at the same ticket machine. Payment methods accepted include credit cards (VISA/Master/JCB/AMEX/Diners/UnionPay), public transport e-money (Suica/iD/QUICPay), QR payments (PayPay/d払い/Rakuten Pay/au PAY/Alipay/WeChat Pay), and cash.
3Seating and Receiving Your Order
There are only 6 counter seats. There is no background music; the space is serene, with only the sounds of cooking and slurping noodles. Your ramen will be served 3-10 minutes after being seated.
4Other Notes
The Ravioli Gourmandise uses the same base soup, but the ravioli contains truffle, foie gras, and prosciutto. It's designed to be broken open midway through to melt the contents into the soup for a change in flavor. Niku Gohan has a simple composition of wasabi, horseradish, green onions, and unseasoned chashu. The classic way to finish is to pour soup over it, like hitsumabushi. Cold-brew Hojicha is provided after your meal.
