Ginza Soryu
銀座 創龍
Overview
Located in Ginza 6-chome, on the first floor of the Maxidopia Building, just a 2-minute walk from Ginza Station C2 Exit and 3 minutes from JR Yurakucho Station, this ramen shop is produced by 'Nogata Hope' and aims for 'a cut above' in quality. It's a precious spot in Ginza to enjoy late-night ramen (shime ramen), open from 11:00 AM to 3:00 AM the next day from Monday to Saturday, and from 11:00 AM to 11:00 PM on Sundays. The three signature 'Oedo Shoyu' (soy sauce) ramens are: 'Oedo Black Shoyu' (1,100 yen), featuring homemade soy sauce and a rich flying fish broth (ago dashi) with medium-thin wavy noodles (chijire-men) and three types of chashu (braised pork belly); 'Oedo White Shoyu' (1,100 yen), with a mellow sweetness from a white soy sauce base made with two types of white soy sauce, shiro tamari, ishiru (fish sauce), and deep sea salt from Tokyo's Izu Oshima island, combined with a clear broth (chintan soup) made from aromatic vegetables; and 'Oedo Burnt Shoyu' (1,180 yen), offering a fragrant, well-burnt soy sauce flavor from lard, with a black ramen-style appearance. Also served are 'Moto Ramen' and 'Ko Ramen', which are part of the Nogata Hope main store lineage. A unique tomato-based menu item, 'Pork Rice' (800 yen), is also a signature dish, described as a pork belly version of chicken rice with a distinctive pizza sauce-like flavor. Toppings are generous, including three types of chashu (pork belly, low-temperature cooked chicken breast, roasted), a soft-boiled egg (hanjuku tamago), bamboo shoots (menma), seaweed (nori), Japanese mustard spinach (komatsuna), green onions, onions, and daikon sprouts (kaiware), a luxurious combination that justifies the price over 1,000 yen. The side dishes, round mochi-like dumplings (maru-mochi gyoza) and perilla leaf dumplings (shiso gyoza), are also popular. Free spicy bean sprout kimchi is available on the tables and can be refilled as many times as you like. There's a special offer of one free drink for LINE friends registration. The interior features a high ceiling and a calm, Japanese modern atmosphere with a total of 28 seats, including 8 counter seats, multiple tables, and sofa seats.

1Before Visiting
Located on the 1st floor of Maxidopia Building, a short walk from Miyuki-dori in Ginza 6-chome, 2 minutes walk from Ginza Station C2 exit, and 3 minutes walk from JR Yurakucho Station. Open late from 11:00 to 3:00 AM the next day from Monday to Saturday, and from 11:00 to 11:00 PM on Sundays, making it convenient for a late-night ramen fix in Ginza. During peak hours (around 12 PM, 9 PM, and 12-2 AM), it can get full, but with 28 seats including table seats, there's rarely a long wait outside, usually only 2-3 groups at most.
2Ordering & Payment
There is no ticket machine; orders are taken verbally after you are seated and payment is made afterwards. Staff will come to take your order. Choose from the three signature "Oedo Shoyu" (Soy Sauce) ramen varieties (Black Shoyu 1,100 yen / White Shoyu 1,100 yen / Scorched Shoyu 1,180 yen), Nogata Hope-style "Gen Ramen" or "Ko Ramen", Tsukemen (dipping noodles), and side dishes like "Pork Rice" 800 yen, "Marumochi Gyoza", "Shiso Gyoza", etc. For Gen Ramen and Ko Ramen, you can choose noodle firmness (normal / firm - kata), and enjoy free large size (oomori) and free rice refills (gohan okawari muryo). Payment can be made at the register after your meal using cash, credit card, e-money, or QR payment (PayPay). Register as a LINE friend to get one free drink.
3Seating & Receiving Your Order
There are 28 seats in total, including 8 counter seats, multiple tables, and sofa seats. Staff will guide you to an available seat, making it suitable for meetings or group visits. Your ramen will be served in 5-10 minutes.
4Other Information
Free spicy bean sprout kimchi (karami moyashi kimchi) is available on the table, which can be enjoyed with beer or drinks while waiting for your ramen. Refills are also possible, and regular customers often ask for more. Gen Ramen and Ko Ramen are in the lineage of Nogata Hope's main branch, and you can adjust the soup's richness with the sauce provided on the table. The Pork Rice has a unique flavor and composition different from fried rice, and is a signature dish alongside the ramen.
