A tanmen (a type of ramen featuring stir-fried vegetables and meat in a clear soup) specialty shop opened in 2019 on the 1st floor of Ginza Saito Building at Ginza 4-14-3, just a 3-minute walk from Higashi-Ginza Station's Exit 5. It's characterized by its bold simplicity, offering a choice between just two menu items: "Tanmen" (1,100 yen) and "Large Tanmen" (1,300 yen). The soup is a gentle, clear, salt-based chintan (clear soup) made from a chicken bone broth, infused with the rich umami and sweetness of napa cabbage and pork. A distinctive feature is the "napa cabbage as the star" style, where a generous amount of cabbage covers the entire bowl. The origin of the napa cabbage is posted daily on the wall (e.g., Ibaraki-grown yellow-core napa cabbage, Awaji Island-grown, Oumibijin variety), and its sweetness and texture vary depending on the season and origin. The noodles are thin and straight, and the cabbage acts as a lid, keeping the soup piping hot until the very last bite, so much so that some customers burn their mouths. Optional toppings include "Butter" (100 yen, adds richness), "Nori" (150 yen, dried seaweed), and "Cilantro" (150 yen, large serving also available, fresh and sweet type). The owner's homemade rayu (chili oil), available for free on the table and also for sale in bottles, is a great seasoning to enhance the soup's flavor. White pepper, vinegar, and homemade rayu are available on the table, and many regulars finish their bowls with plenty of white pepper. It's a popular shop selected among the Tabelog TOP 5000, and the owner's warm smile and attentive service are also highly praised. Operating hours are limited, as the shop is completely closed on weekends and national holidays, and only open for lunch on Fridays. Therefore, it is necessary to check the business days before visiting.
How to Order
1Before Entering
A 3-minute walk from Higashi-Ginza Station Exit 5, located on the 1st floor of Ginza Saito Building at Ginza 4-14-3. Business days are limited: Mon-Thu 11:30-15:00 and 17:00-20:00 (L.O. 19:30), Fri 11:30-15:00 (lunch only), closed on Sat, Sun, and national holidays. During peak hours (around 12:00 PM), there are often 1-5 people waiting outside, but the turnover is fast, so expect a wait of 5-10 minutes. It's often easier to get in during evening hours.
2Purchasing Tickets & Ordering
Purchase meal tickets from the vending machine at the entrance. The ticket machine does not have photos or English displays and mainly features Kanji menus, but the menu is extremely simple: "Tanmen 1,100 yen / Tanmen Oomori (Large size) 1,300 yen / Butter 100 yen / Nori (Seaweed) 150 yen / Coriander 150 yen / Coriander Oomori (Large size) / Homemade Chili Oil (bottle) / Canned Beer 400 yen / Canned Lemon Sour / Canned Highball," so you won't get lost. Payment is cash only at the ticket machine (credit cards, e-money, and QR payments are not accepted). The ticket machine only accepts 1,000 yen bills; for 5,000 yen or 10,000 yen bills, ask a staff member for change.
3Seating & Receiving
There are only 9 counter seats. With the owner and one female staff member, orders are served very quickly, within 2-5 minutes of ordering. Water is self-service, and paper napkins are available as tissues on the table. Cabbage is cut for each order, ensuring a crisp texture.
4Others
White pepper, vinegar, and homemade chili oil are on the table. After enjoying the rich umami and sweetness of the cabbage, adding a small amount of homemade chili oil towards the end sharpens the flavor, and a splash of vinegar adds refreshing brightness. The butter topping (100 yen) is a popular item to add richness and is typically added after eating more than half of the ramen. The owner's warm service, sending off customers with a smile, is also well-regarded.
