Gokubuto Dakuryu Ramen Ra Keiko Honten
極太濁流ラーメン ら・けいこ 本店
Overview
Founded in 2004, this shop, located in Sakae, Naka-ku, Nagoya, is a pioneer of Nagoya's Jiro-style inspired ramen. The founder is the former owner of 'Hakusui', which was located in Naka-ku, Nagoya. Since its opening, back when there were hardly any Jiro-style shops in the city, it has led the Jiro-style ramen scene in Nagoya. The signature 'Ramen' (available in small, medium, and large) features a rich, emulsified soup that condenses the richness and sharpness of tonkotsu (pork bone) and shoyu (soy sauce), incredibly thick wavy noodles that you can feel against your lips, and a generous mound of bean sprouts and cabbage. While being a Jiro-style inspired shop, it has a unique presence described as 'turbid current' (濁流). The homemade noodles, known for their firm, chewy texture ('washiwashi') and the sweet flavor of wheat, offer a unique mouthfeel specific to the Rakeiko chain, making them particularly distinct among Jiro-style noodles. They also offer derivative menus such as 'Shirunashi' (soupless ramen), the 'CV Kit' (an Iekei-style custom where yasai (vegetables) are replaced with spinach and nori (seaweed)), and toppings like pork belly slices and raw egg, allowing customers to enjoy varying flavor profiles depending on their chosen toppings. Operating until 2:30 AM, it's a valuable establishment that also caters to the late-night ramen demand in the Sakae area, and it has been selected for Aichi Hyakumeiten (Top 100 Shops) 2025.
How to Order
(Check the official account below in advance for irregular closures and updates)

1Before entering
The shop is located on the 1st floor of a multi-tenant building along Joshidai Hiroji street, about a 5-minute walk from Sakae Station (Higashiyama Line/Meijo Line) Exit 12 or 13. It's in a corner of the backstreets behind the Chunichi Building, a busy restaurant area at night, so first-time visitors might feel a bit overwhelmed by the atmosphere. It's closed on Sundays and open until 2:30 AM, often used for late-night meals after drinking in Sakae. The interior is small with only 8 counter seats, and it can get full even late at night, so during peak hours, you might have to wait in line outside.
2Purchasing meal tickets and ordering
There's a ticket vending machine near the entrance, placed in a way that you effectively buy tickets outside before entering. The menu is simple: Ramen (Small/Regular, Medium, Large), Soupless ramen, and toppings (CV Kit, change to pork belly, raw egg, extra vegetables (yasai mashi), etc.). The ticket machine has no photos or English, so you'll rely on the Japanese button labels. After purchasing your ticket, enter the shop and verbally state your ninniku (garlic) preference when placing the ticket on the counter. Unlike the original Jiro's full call (yasai (vegetables), abura (back fat), karame (more sauce)), this shop only requires a simple call for ninniku (garlic) preference. Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and receiving
There are only 8 counter seats. Move to an empty seat as instructed by the staff. Your order will be served in about 10 minutes, and you'll wait while watching the cooking process over the counter.
4Other
The vegetables are lightly seasoned or unseasoned and meant to be eaten mixed with the soup. The soup is rich, so it's customary to enjoy it by thoroughly mixing it with the vegetables and noodles rather than drinking it all. If you choose the CV Kit (100 yen), the vegetables are replaced with spinach and nori (seaweed), transforming it into an Iekei-style dish. By combining toppings like soupless ramen, raw egg, minced garlic, or changing to pork belly, you can enjoy a different flavor profile each time.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
