Overview
Hachan Ramen is a popular shop located in the office district, just a 2-minute walk from the North Exit of Hamamatsucho Station. Chef Ha, a Vietnamese owner who trained for nine years at "Mendokoro Honda," which has produced many famous restaurants, runs this establishment. In addition to the Hamamatsucho main store, there is also a branch in Shimbashi. They have two signature dishes. One is Kombusui Tsukemen (kelp-water dipping noodles). The glossy noodles soaked in thick kelp water immediately convey their chewy texture and high quality upon slurping. A guide is provided, explaining six ways to eat it: with table salt, lemon, dipping sauce, condiments, and extra soup, allowing you to enjoy changing flavors until the end. The other signature dish is Tokusei Shoyu Ramen (special soy sauce ramen), a highly refined bowl with a sharp soy sauce soup and several types of meat, including pork chashu and duck roast. Mazesoba (soupless ramen), which has won awards at TRY, is also very popular. Mondays are sometimes special operating days, offering only limited noodles like shellfish broth instead of the regular menu. The availability of Vietnamese beer is also a playful touch unique to this shop.

1Before entering
A 2-minute walk from JR Hamamatsucho Station North Exit or Toei Daimon Station. Open Monday to Saturday, with two shifts: lunch (11:00-15:00) and dinner (18:00-21:00). Closed on Sundays. As it is a popular shop in an office district, there may be a queue outside during busy lunch hours. Mondays may be special operating days offering only limited noodles instead of the regular menu, so if you are specifically looking for the signature Kombusui Tsukemen, Tuesday or later is more reliable.
2Purchase meal tickets and order
Purchase meal tickets at the ticket vending machine in front of the store, hand them to the staff, and then join the queue (pre-purchase system). The vending machine accepts cash only; credit cards, e-money, and QR code payments are not accepted. Choose from Kombusui Tsukemen (soy sauce/salt), Tokusei Shoyu Ramen, Mazesoba, Aedama (seasoned extra noodles), etc. The popular Kombusui Tsukemen may sell out, so it's safer to visit earlier in the day.
3Seating and serving
There are 6 counter seats and 2 tables (one 2-person table, one 4-person table). Since you hand over your meal ticket beforehand, your order will be served shortly after you are seated.
4Other information
Kombusui Tsukemen comes with a guide on how to eat it. First, try the noodles plain, then with salt, then with salt and lemon, then with the dipping sauce. This way, you can enjoy many different expressions from a single bowl. Finally, add extra soup to the dipping sauce to dilute it, and you can drink it all as a seafood-infused broth. Information on temporary closures and limited noodles is announced on official social media.
