Hakata Ikkousha Sohonten
博多一幸舎 総本店
Overview
A 5-minute walk from Hakata Station's Hakata Exit, this is the main branch of a long-established shop known as the "Original Awa-kei" (foamy style) among Hakata Tonkotsu ramen. Its signature is the fine, creamy foam (abura-awa) created by the stirring technique of artisans, who frequently move the pork bones in two large traditional pots (hagama) to incorporate air during the cooking process. With a creamy mouthfeel due to the surface foam, this bowl is praised as the ideal form of Hakata Tonkotsu, where rich tonkotsu depth and the aroma of seafood dashi arrive in delightful layers. The noodles are classic Hakata thin straight noodles, characterized by a pleasant chewiness and crisp texture. They pair wonderfully with the soup, allowing you to enjoy even kaedama (extra noodle servings) to the fullest. Noodle hardness can be specified verbally, such as "barikata" (extra firm), "katame" (firm), or "futsu" (regular). The chashu (braised pork belly) is tender and melts in your mouth, while green onions and wood ear mushrooms add a delightful accent. Side dish sets like the Mentaiko-don Set and the Chashu Mayo-don Set, both priced at 1350 yen, feature sweet and savory, rich ingredients that pair perfectly with the tonkotsu soup. Many regulars enjoy the "infinite loop" of flavors with their ramen. Despite being a popular spot with many international visitors and a queue of around 10 people even in the late evening (around 10 PM), the lively service where all staff cheerfully respond with "Haiyo! Arigato gozaimasu!" (Yes! Thank you very much!) is highly praised, establishing it as an indispensable establishment around Hakata Station.
How to Order
1Before Entering
A hugely popular restaurant located a 5-minute walk from Hakata Station's Hakata Exit, alongside Shin-Shin and Daruma in the Hakata Station area. Open Mon-Sat 11:00-22:30, Sun 11:00-21:00, open year-round (except New Year holidays, until 21:00 on the last day of long holidays). On weekends, you can often enter without waiting if you arrive early around 11:00, but after 12:00, a 30-40 minute wait is common, and even around 22:00 at night, there's a wait of about 10 minutes. Late night (after 22:00) and immediately after opening before 11:00 are relatively easy times to get in.
2Purchase Meal Ticket and Order
After lining up outside, you purchase a meal ticket from a touch-panel ticket machine inside the store upon entry. The touch panel has photos, but there are many menu items, and buttons for items other than rice bowl sets are particularly small, which can be a bit confusing for first-timers. Signature items are Ramen 950 yen, Ajitama (seasoned egg) Ramen 1100 yen, and Mentaiko Don Set / Char Mayo Don Set for 1350 yen each. Changing to Aka-Karamiso (spicy red paste) is an additional +100 yen. A half kaedama (extra noodle) is +100 yen; a full kaedama (extra noodle) can be added by calling a staff member after sitting down. A staff member will ask about noodle firmness after you hand over your meal ticket, so choose from "barikata" (very firm), "katame" (firm), "futsu" (regular), or "yawa" (soft) and respond. Payments are accepted only in cash and d払い (d-payment); credit cards, IC transportation cards, and other QR payments are not accepted.
3Seating and Receiving
There are 18 seats in total, combining counter and table seats, and staff will guide you to your seat. Order taking, seating guidance, cooking, and serving flow smoothly with good coordination, and delivery generally takes 2-10 minutes (depending on the level of crowding).
4Other
Takana (spicy pickled mustard greens), sesame seeds, and beni shoga (red pickled ginger) are available on the table; it's common to add them gradually mid-meal for a change of flavor. For noodle firmness, "barikata" (very firm) is a local staple, while "futsu" (regular) or "katame" (firm) are easier to eat for first-timers. Kaedama (extra noodle) (approx. 300 yen) can be chosen from half kaedama (extra noodle) or regular kaedama (extra noodle) and can be ordered additionally at your seat. Sides like Mentaiko Don and Char Mayo Don arrive at the same time as or before the ramen, so eating them in balance leads to higher satisfaction.
