Hakata Issei Ichidai
博多 一成一代
Overview
Hakata Issei Ichidai, a specialty shop for awa-kei tonkotsu ramen (foamy pork bone ramen), is conveniently located just a 0-minute walk from Higashi-Hie Station Exit 4. The unique style of this establishment features a U-shaped counter inspired by food stalls and table seating, operating as a ramen shop during the day and transforming into a ramen izakaya (ramen pub) after 5 PM, where guests can enjoy snacks like yakitori and sashimi with beer. Their signature tonkotsu ramen is characterized by a rich, creamy soup so foamy it has a layer of bubbles on the surface, yet surprisingly boasts a clean aftertaste. It retains the strong aroma typical of tonkotsu ramen, placing it in the lineage of what's known as "kusauma-kei" (fragrant yet delicious) ramen. The noodles are extra-thin and served firm by default, perfectly lifting the foamy soup. Toppings include tender, melt-in-your-mouth chashu (braised pork belly) and Hakata-style kikurage (wood ear mushroom) for an accent. Priced at 830 yen, which is affordable for a city center, its high cost performance is another reason for its popularity. The side menu offers dishes that pair well with alcohol, such as fried rice, gyoza, and salted chicken skin, making it a versatile spot perfect for either capping off a night of drinking or serving as the main event to start your evening.
How to Order
1Before Entering
A street-level shop located directly above the subway exit, 0 minutes walk from Higashi-Hie Station Exit 4. The APA Hotel Higashi-Hie Ekimae next door serves as a landmark. Closed on Mondays. Weekday lunch (11:30-14:00) and early dinner (17:00-20:00) tend to be crowded, with short waits outside the shop during peak hours. It's relatively easier to enter after 13:30 on weekdays or during late evening hours.
2Ordering
Upon entering, staff will guide you to an empty seat. Orders are placed by self-operating a tablet on your table; since there's no language switching button, you'll operate it in Japanese. The menu features their signature Tonkotsu Ramen, Tsukemen, Toripaitan Ramen, set menus with ramen + fried rice or gyoza, and izakaya dishes like yakitori and sashimi in the evenings. For noodle firmness, typical of Hakata ramen, options like barikata (very firm) and harigane (extra firm wire-like) are conveyed verbally to the staff. Additional kaedama (extra noodle) should also be requested verbally from the staff.
3Seating and Receiving
The interior has a total of 26 seats, with 4 counter seats and multiple table seats. Orders are served in approximately 8 minutes, with kaedama (extra noodle) taking about 3-4 minutes.
4Payment
Payment is a self-checkout system at the register when you leave the store. They accept cash, e-money, and QR code payments (PayPay, d払い), but credit cards are not accepted. The tables are equipped with Hakata-style condiments such as karashi takana (spicy pickled mustard greens), red ginger, and sesame seeds, which you can add later to change the flavor.

前回までのスープの苦味が和らぎネオ博多豚骨の良さ全開! pic.twitter.com/RF2D4neSTR
