Hakata Issou Hakata Ekihigashi Main Branch - Tonkotsu A 6-minute walk from Hakata Station, this renowned tonkotsu ramen shop is highly recommended by both tourists and locals as "the place for Hakata ramen." Its signature is a creamy, rich soup known as "Tonkotsu Cappuccino," characterized by a fine foam covering the surface. The soup features the deep umami of tonkotsu pork bone broth, slow-cooked for hours, perfectly balanced with a surprisingly mild aftertaste. Noodles can be chosen from four levels of firmness: barikata (extra firm), kata (firm), futsu (regular), or yawa (soft). Kaedama (extra noodle refills) are also available. Orders are placed via a ticket vending machine, and during busy times or when a queue forms, staff will prompt customers in line to purchase their tickets. The shop has a total of 21 seats: 5 at the counter and 4 tables for four people each. English-speaking staff are available.
How to Order
1Before entering
Located north of Hakata Ward Office, a 6-minute walk from Hakata Station. Open from 11:00 AM to 0:00 AM the next day. Closures are irregular, so checking SNS or daily business status before visiting is recommended. This is the main store of Hakata Issou, and queues can reach 10-40 people on weekday afternoons and over 200 on holidays. Although the turnover is fast, it's safer to anticipate a wait. The queue tends to be shorter on rainy days or after 2 PM.
2Purchasing tickets and ordering
Join the end of the line, and a staff member will guide you inside when it's your turn. Purchase meal tickets from the vending machine near the entrance (payment after lining up). The vending machine has photos and English descriptions, and many foreign customers use it. Classic items include "Special Ramen", "Wonton Ramen", "Seasoned Egg Ramen", and "Ramen" (from 960 yen). Side dishes include *makanai-don* (staff meal bowl) and gyoza. Payment is cash only; cards, e-money, and QR code payments are not accepted. The ticket machine also accepts 10,000 yen bills.
3Seating and receiving
Hand your meal ticket to the staff, who will guide you to a counter seat or a 4-person table. Seating consists of counter seats and small tables (21 seats total), and you might share a table during peak hours. When handing over your ticket, specify your noodle hardness from "barikata (very firm) / kata (firm) / futsu (regular) / yawa (soft)". Service is quick, usually around 5 minutes. The counter area can sometimes be windy from the air conditioning, so adjusting your outerwear might make it more comfortable.
4Other
Table condiments include the white red ginger unique to the Hakata Ikkousha series, spicy takana, grated ginger, garlic (with presser), and ground sesame. It's customary to first enjoy the frothy 'Tonkotsu Cappuccino' soup, then add red ginger or spicy takana later to change the flavor. A kaedama (extra noodle) costs around 150 yen; if you have room, ordering an extra noodle with a different hardness can add to the enjoyment.
