Hakata Ramen Shin-Shin Hakata Deitos
博多らーめん Shin-Shin 博多デイトス店
Overview
This popular Hakata Tonkotsu ramen shop is located in "Hakata MeN-Kaido" on the 2nd floor of "Hakata Deitos," a commercial facility directly connected to Hakata Station in Fukuoka. Its main branch is situated in Tenjin. The signature Hakata Shin-Shin Ramen features a creamy tonkotsu soup with less of the unique pork bone smell, offering a light and easy-to-drink aftertaste. It's paired with extra-fine noodles, and customers can verbally specify their preferred noodle firmness (soft, regular, firm, 'bari-kata' - very firm, etc.) when ordering. Noodle refills (kaedama) are available for 150 yen, and you can enjoy customizing your flavor with table-side grated garlic, sesame, and chili oil. The menu also offers a wide range of side dishes and sets, including half fried rice, mentai yaki ramen, gyoza, and deep-fried tofu. Open daily with continuous service until midnight (from 10 AM on weekends and holidays), it's convenient for a meal before or after using Hakata Station. Many international tourists visit, and English menus are available. The latest information is also posted on their official Instagram (https://www.instagram.com/hakata_shinshin/).

Seating
Tables seat up to ~4 people. Groups of 5+ will need multiple tables and may wait longer than usual.
How to Order
1. Before Entering (If there's a queue) Inside "Hakata Noodle Street" on the 2nd floor of Hakata Deitos, staff often stand at the storefront to manage queues, so please follow their guidance. During peak hours, wait times can be 20-45 minutes; even near midnight, there might be a queue of 10-20 people, but the turnover is fast. During busy times, table seats may be shared with other customers. 2. Purchasing Meal Tickets / Ordering There is no ticket machine; instead, you take a seat, press the staff call button on the table, and order verbally. When ordering ramen, you will definitely be asked about your noodle firmness preference (soft, regular, firm, extra firm), so please tell them verbally. English menu available. 3. Seating and Receiving Your Order Take a seat (10 counter seats or table seats) as guided by the staff. Your order will generally be served within 2-5 minutes after ordering. Paper aprons are available. 4. Others Kaedama (noodle refill) is 150 yen, and can be added by pressing the table button. You can customize the taste to your liking with the grated garlic, sesame, and chili oil available on the table. A wide variety of side dish and drink sets are also available, such as the Shin-Shin Set for 880 yen, Ramen Set, Special 3-Item Set for 1500 yen, and the Tipsy Set (beer + edamame + gyoza, etc.).
