Hakata Shoyu Ramen Tsukiya Hakata DEITOS
博多醤油ラーメン 月や 博多デイトス店
Overview
A rare specialty soy sauce ramen shop in Hakata, located within 'Hakata Men Kaido' on the 2nd floor of 'Deitos', a station building directly connected to JR Hakata Station. In Hakata Men Kaido, which tends to be dominated by Tonkotsu ramen, it has gained popularity among tourists and business travelers as a light and refreshing alternative. The soup is a clear, amber color with a chicken bone base, offering a clean finish with no artificial seasonings. It features a gentle spread of soy sauce aroma and umami, with a modest saltiness and a light quality that allows you to drink the soup to the last drop. The noodles are medium-thick, flat, and wavy, prized for their chewy texture and excellent ability to entangle with the soup. A notice is displayed inside the shop indicating that service may take longer due to the flat noodles. In addition to the signature soy sauce ramen (820-850 yen), the Motsu Ramen (1,300 yen) topped with Hakata's famous motsu (offal) is popular, offering the sensation of enjoying motsunabe's finishing dish as ramen. Plenty of plump motsu and chives are served, pairing perfectly with the Hakata soy sauce soup. For tourists, there's a set with mentaiko rice, and for business travelers, a 'quick drink' set (with draft beer) is available, making it convenient for a meal before or after using Hakata Station. Yuzu kosho and chili pepper are available on the table to change the flavor halfway through your meal. It's also praised as a hidden gem, relatively easy to enter even when nearby Hakata Tonkotsu shops have long queues.
How to Order

1Before entering
Located directly connected to JR Hakata Station, on the 2F of the "Deitos" station building in Hakata Men Kaido. Open continuously from 11:00 to 23:00, with irregular holidays according to Hakata Deitos' closing days. It's relatively easy to enter even during lunch and dinner peaks when nearby Hakata tonkotsu shops have long queues, making it suitable for short visits while waiting for a Shinkansen or before a night bus. A queue may form right after opening on holidays, so it's safe to expect a 10-15 minute wait.
2Purchasing meal tickets and ordering
Purchase meal tickets from the vending machine at the shop entrance. It's simple to operate with menu photos. In addition to the signature Shoyu Ramen for 820 yen (regular) / 850 yen (regular with toppings) and Motsu Ramen for 1,300 yen, there are also combinations for tourists and business travelers, such as Mentai Rice Set and a quick drink set with draft beer. Payments accepted include cash, AMEX cards, and electronic money including transportation IC cards. QR code payments cannot be used directly at the ticket machine, but staff can assist if you ask them.
3Seating and serving
Staff will guide you to a counter or table seat. With a total of 38 seats, and due to the flat noodles, serving time is longer; there's a sign inside the shop saying, "Serving takes time due to flat noodles." If your Shinkansen departure time is approaching, informing the staff when ordering may result in special consideration.
4Other
Yuzu kosho (citrus pepper paste) and chili pepper are available on the table for changing the flavor later. For Motsu Ramen, it's recommended to tighten the flavor with chili pepper. Kaedama (extra noodle) is not available, so if you want more volume, opt for oomori (large size) or a set meal. The method of pouring leftover soup over mentai rice to finish the meal is also popular among tourists.
