Ramen Hiiki
らーめん飛粋
Overview
Ramen Hisui, hailed as a 'Neo Iekei' (house-style ramen) shop, is conveniently located 2 to 5 minutes on foot from JR Kamata Station West Exit. Founded in 2018, it's a renowned Kamata establishment, consistently selected for Tabelog's 'Ramen Hyakumeiten' (Top 100 Ramen Shops) from 2019-2021 and 2023-2025. The shop is rapidly expanding its presence, with a second location in Musashi-Nitta (2024), a third planned for Kamiooka (May-June 2026), and a fourth in Kawasaki. The signature ramen features a refined taste unique among Iekei ramen, with a soy-sauce-based soup that beautifully harmonizes pork bones (tonkotsu) and chicken bones. The rich umami of pork and chicken combine to create a soup that is both refreshing on the palate and intensely flavorful, establishing its own distinctive direction within the Iekei tradition. The sharpness of the soy sauce and the sweetness of the chicken oil (chiyu) form distinct layers of taste. The noodles are medium-thick, flat noodles from Sakai Seimen, a trusted supplier for Iekei, cut short for easy eating and boasting a delightful chewy texture. A standard Iekei system allows customers to verbally customize their noodle firmness, soup richness, and oil amount. Two types of chashu (braised pork) are offered: thigh meat with a fragrant smoky aroma, and belly meat that is incredibly tender and melts in your mouth. The Special Ramen (1400 yen) provides a generous portion of four slices – two of each type. Other toppings include komatsuna (Japanese mustard spinach), nori (seaweed), and a special seasoned egg (ajitama) from their unique "Maximum Koitamago" brand, known for its distinctively perfectly soft-boiled yolk. Popular side dishes include the Meat and Egg Bowl (Nikutama-don, 500 yen), the Maximum Koitamago Bibimbap Bowl (500 yen), and plain Rice (150 yen). A classic Iekei dining style involves combining the essential nori and rice to fully enjoy both the soup and solids. For those who prefer a soupless option, the "Hojun Chiyu Soba" (1100 yen) is a highly praised dish. It features noodles richly mixed with a kaeshi (sauce base) and chicken oil, both made with 100% parent chicken, filling your mouth with the luxurious aroma of chicken oil. Adding a raw egg midway transforms it into a TKM (Tamago Kake Men - egg-mixed noodles) style, a highly rated soupless (jiru-nashi) offering from this celebrated ramen shop. The tables are equipped with standard Iekei customization items: garlic, ginger, chili paste, black pepper, and vinegar. The shop also features a clean, bright interior, brisk and efficient service, and accepts cashless payments for smooth transactions.
How to Order
1Before Entering
Located 2-5 minutes walk from JR Kamata Station West Exit, this Iekei ramen shop is known as 'Neo Iekei'. Established in 2018, it is expanding rapidly with a second branch in Musashishinta (2024), a third in Kamiooka (scheduled for May-June 2026), and a fourth planned for Kawasaki. It has been continuously selected for Tabelog's 'Ramen Hyakumeiten' (Top 100 Ramen Shops) from 2019-2021 and 2023-2025. Lines are constant throughout the day (e.g., 12 people waiting at 12:50 PM on Saturday, entering in 10-15 minutes; 4-10 people on weekdays at 11 AM; 4-6 people on holidays around 4 PM), but the turnover is fast, and you can usually be seated in 10-15 minutes.
2Purchase Meal Ticket and Order
There is a ticket machine at the shop entrance, operating on a 'post-purchase' system (wait in line, and when your turn approaches, a staff member will call out, 'Please buy your ticket when the person in front has finished,' then enter the shop, buy a ticket from the machine, and hand it to the staff). Signature items include Ramen for 900 yen, Special Ramen for 1400 yen, Rich Chi-yu Soba (soupless) for 1100 yen, Garichi for 1100 yen, Rice for 150 yen, Nikutama-don for 500 yen, and Maxim Koitamago Bibimbap-don for 500 yen. When handing your ticket to the staff, verbally communicate the Iekei standard 3-stage customizations: noodle hardness (kata (firm)/futsu (regular)/yawa (soft)), flavor richness (koime (rich)/futsu (regular)/usume (light)), and oil quantity (ome (more oil)/futsu (regular)/sukuname (less oil)). For first-time visitors, choosing 'futsu' (regular) for all is recommended. Payments are accepted in cash and cashless methods (QR code, e-money, credit card).
3Seating and Receiving Your Order
The shop interior is bright and clean, and the kitchen is also spacious and very clean. Staff will guide you to your seat, and your order will be served in approximately 5-10 minutes. The excellent operation and teamwork ensure fast turnover.
4Other Notes
Garlic, ginger, chili paste, black pepper, and vinegar are available on the table. The signature soup is a well-balanced soy-sauce base with pork and chicken bones, offering a clear yet rich mouthfeel. It pairs well with Sakai Seimen's medium-thick flat noodles (cut short for easy eating), which are favored by Iekei ramen shops. There are two types of chashu: thigh meat (with smoky aroma) and belly meat (tender). The special ramen includes a generous total of four slices (two of each type). The Maxim Koitamago (rich egg) has a uniquely soft yolk. The classic way to enjoy Iekei ramen to the fullest is with a combination of nori (seaweed) and rice, which are essential elements.
