Overview
Honke Daiichi Asahi Honten, founded in 1947, is an old-established restaurant often called synonymous with Kyoto ramen. It is known as one of the establishments that built Kyoto's post-war ramen culture, alongside Shinpukusaikan next door, and is a regular on the Ramen Hyakumeiten (Top 100 Ramen Shops) list. The signature ramen features a tonkotsu-shoyu (pork bone soy sauce) soup, made by simmering domestic pork for a long time. The clear brown soup is beloved for its addictive taste, where the umami of pork and the sharpness and sweetness of Gokou soy sauce combine, giving it a rich animal-basedコク koku (richness) despite being a clear broth (清湯 chintan). The noodles are straight, medium-thin to medium-thick, from Kondo Seimen in Kyoto, offering excellent harmony with the soup. A distinctive feature is the chashu; even without ordering chashu-men, a generous amount of thinly sliced simmered pork comes standard. You can also request extra Kujo green onions (ネギ多め negi-ome), which provide a pleasant crunchy texture as a good accent. It operates continuously from 6 AM until late at night, making it widely usable from 'asa-ra' (morning ramen) to a late-night meal after drinking in Kyoto, which is one reason for its long-standing popularity.

1Before entering
Approximately a 5-minute walk from JR Kyoto Station. This is one of Kyoto's most popular shops, often with queues throughout the day from morning until late at night, and waiting times can reach about an hour during peak hours. There's another famous shop (Shinpukusaikan) right next door, and the queues for both shops can be adjacent and confusing. It's best to confirm which shop's queue is the end, either by checking the display at the storefront or asking staff, before joining the line. The turnover is relatively fast, so even if the queue looks long, it moves quickly.
2Buying a ticket / ordering
There is a touch-panel ticket vending machine that supports English. At this shop, you might first queue up, and as your turn approaches, you may be guided inside once to purchase a ticket from the vending machine, then return to the queue to wait again. The staff will guide you as needed, so just follow their instructions. In addition to the standard ramen, there is also chashu-men and special ramen. Payment methods include cash, credit cards, electronic money, and QR payment.
3Seating / receiving
The staff may ask for your preferences regarding noodle firmness (e.g., カタ kata (firm)) before or after you enter the shop. After you are seated, your ramen will be served shortly. When ordering, you can sometimes request ネギ多め negi-ome (extra green onion) or ヤサイ(もやし)増し yasai mashi (extra vegetables/bean sprouts) for free; for chashu-men, large portions (大盛り omori) of bean sprouts and green onions are free.
4Other tips
The tonkotsu-shoyu soup is relatively light, but the saltiness can feel strong on some days. It's a bowl where the flavor of Kujo green onions shines, so it's recommended to taste it as is first. Pepper may not be on the table; seasonings might be available on racks next to the seats, so check there.
