Huunji Shinjuku
風雲児 新宿本店
Overview
Fuunji Shinjuku Honten is located in the basement, a 5-minute walk from the West or South Exit of JR Shinjuku Station. Founded in 2007, it is a prominent representative of the Shinjuku tsukemen (dipping noodles) boom, boasting a Tabelog rating of 3.77, inclusion in the TOP 5,000 restaurants, and consecutive selections to the "Hyakumeiten" (Top 100 Restaurants) list from 2019 to 2023, solidifying its position as a long-standing leader in the Kanto tsukemen scene. Its most distinctive feature is the "W-soup" (double soup), which combines a rich tori-paitan (creamy chicken broth) made purely from domestic chicken, rendered milky white by the owner, with a seafood-based broth rich in dried sardines from the Seto Inland Sea of Shikoku and carefully selected dried bonito flakes. This unique blend of chicken paitan's richness and seafood's umami creates a profoundly flavorful yet remarkably smooth and mellow finish, earning it wide support from tsukemen enthusiasts and even those who don't typically eat ramen. The noodles are homemade, medium-thick, and straight, specially developed by the owner with the al dente texture of pasta and the chewiness of Sanuki udon in mind. Their smooth texture and satisfying bite pair perfectly with the rich dipping soup. The signature Tokusei Tsukemen, priced at 1200 yen, is a generously topped dish featuring menma (bamboo shoots), nori (seaweed), ajitama (seasoned egg), pork chashu (braised pork), green onions, and gyofun (fish powder). The chashu, in particular, is simmered until so tender it almost falls apart when lifted with chopsticks. Another reason for its popularity is the option of a free large portion for the same price as a regular portion. Since a regular portion is about 240g, a large portion is recommended for those with a hearty appetite. Adding gyofun to the soup instantly enhances its aroma, making it enjoyable right up to the final soup-wari (diluting the remaining soup with dashi). In addition to the Shinjuku Honten, Fuunji also has branches in Tokyo Station and Yokohama. It is a popular destination for international tourists, often included in itineraries as a must-visit spot for tsukemen when visiting Kanto.
How to Order
1Before entering
A renowned tsukemen shop located underground, a 5-minute walk from JR Shinjuku Station's West or South exits. Open every day from Monday to Sunday (check in-store for specific hours). Due to its popularity as one of Shinjuku's representative establishments, with a Tabelog rating of 3.77, inclusion in the TOP 5,000, and consecutive selections in the Hyakumeiten (Top 100 Shops) from 2019-2023, expect an outdoor wait of 20-40 minutes during peak times, such as around 25 people outside at 12:45 PM on a Saturday, or 8 people waiting before opening at 10:40 AM on a Saturday. However, there are times with relatively shorter waits, such as right after opening around 11 AM on weekdays, after 5 PM in the evening, or on rainy days. The turnover is quick, and seating is often available within 20-40 minutes.
2Purchasing tickets
Purchase meal tickets at the vending machine near the entrance before proceeding to your seat. The vending machine has pictures, making it easy to use, and recently, electronic money payment has been introduced. Signature items include Tokusei Tsukemen (Special Tsukemen) 1200 yen (regular and large size (omori (large size)) are the same price, large size (omori (large size)) is free), Tsukemen 1000 yen, Tsukemen (regular, large size (omori (large size)), extra-large size), Ramen, and Char Siu as a topping. Since the regular size is about 240g, which is a slightly smaller portion, it is recommended to take advantage of the free large size (omori (large size)). Payments accepted include cash and transportation IC cards (check in-store for the latest information on credit card/QR code payment availability).
3Seating and serving
Seating is mainly at the counter. After handing over your meal ticket, the efficient operation leads to quick service, usually within about 5 minutes of being seated, which is key to the fast turnover of the queue. When handing over your ticket, you verbally choose between regular or large size (omori (large size)). There is also an indoor waiting area, so you will be guided through a two-stage process: outdoor wait -> indoor wait -> seating.
4Other
Established in 2007, this shop is a leading figure in the Shinjuku tsukemen boom. Its signature dish is the "W Soup," which combines a rich chicken paitan soup, made purely with domestic chicken to a milky white opacity by the owner, with a seafood-based soup generously using dried sardines from the Seto Inland Sea of Shikoku and carefully selected dried bonito flakes. The richness of the chicken paitan and the umami of the seafood overlap, resulting in a mellow finish that is rich yet not overwhelming. The noodles are homemade, medium-thick straight noodles, specially crafted by the owner with the image of al dente pasta and Sanuki udon's chewiness. They offer both a smooth texture when slurped and a satisfying chewiness when bitten. Standard toppings include nori (seaweed), ajitama (seasoned egg), pork char siu, green onions, and fish powder; the "Tokusei" (Special) version is especially generous. The fish powder mixed into the soup instantly enhances its aroma. Soup wari (soup diluted with broth) can also be requested at the end. Many international tourists visit, and the shop operates three branches in the Kanto region: Shinjuku Main Store, Tokyo Station, and Yokohama.
