Located at Cosmo Higashi-Ikebukuro 101, a 9-minute walk from Ikebukuro Station East Exit, Gokan is a popular Michelin Bib Gourmand and Tabelog Hyakumeiten (Top 100 Restaurants) establishment. It's a highly sought-after ramen shop with a complete reservation system (TableCheck), where reservations for the following week are instantly filled every Sunday at 10 AM. The signature "Tokujo Shio Ramen" (Special Salt Ramen) is a deeply flavorful bowl where the gentle umami of shellfish dashi (broth) and the richness of chicken oil (chiyu) simultaneously envelop you from the first bite. How to Order
1Before entering
9-minute walk from Ikebukuro Station East Exit, on the ground floor of Cosmo Higashi-Ikebukuro 101. Open only Wed-Sun from 11:30-15:00, closed Mon/Tue, by reservation only (TableCheck). Reservation slots for the following week (Wed-Sun) are released every Sunday at 10:00 AM, but they are almost instantly filled, making it very competitive. Occasionally, a slot may open up if you check for cancellations the night before. It is recommended to arrive 10-20 minutes before your reservation; after the owner puts out the noren (shop curtain), confirm your name before entering.
2Purchasing meal tickets and ordering
There is a ticket machine to the left of the entrance. Purchase your meal ticket and hand it to the owner or proprietress. Signature dishes include Special Shio Ramen for 2200 yen, Special Shoyu Ramen for 2200 yen, the seasonal limited Miso Ramen Kyokugen for 2400 yen, and the side dish Charcoal-Grilled Meat Rice for 500 yen. No consecutive orders (you cannot eat two bowls on the same day), and limited menu items sell out early. Payment is cash only; credit cards, e-money, and QR payment are not accepted.
3Seating and receiving
There are only 8 counter seats. Guests wait while watching the cooking process directly in front of the owner. Serving time is usually 5-10 minutes. After the ramen is served, it is recommended to first taste the soup, then slurp the thin straight noodles.

Table condiments are minimal; the ramen is served with an already perfected balance of clam dashi, chicken oil, soy sauce, and salt, so it is intended to be enjoyed as is. For those who prefer salt at the end, the classic way is to "drink every last drop" to savor the umami of the chicken oil. The side dish, Charcoal-Grilled Meat Rice, comes with various cuts of meat and a soft-boiled egg, pairing perfectly with the main ramen. After finishing your meal, greet the owner and proprietress before leaving.
