1Before entering

A specialty shop inspired by the Jiro-style, located at Asakusa 2-22-10, a 5-minute walk from Tsukuba Express Asakusa Station, or about a 12-minute walk from Ginza Line Tawaramachi Station and other Asakusa Stations. Opened on April 5, 2025, this Asakusa branch of "NO11" (whose main store is in Oyama) follows the Fujimaru style. Business hours are 11:00-15:00 / 17:30-22:00. Around 7 PM, the shop is about 30% full, making it an easy time to enter. During lunch peak hours, there might be a line outside. When there is an outside line, up to 3 people should sit on the bench to the left of the entrance, and the 4th person onwards should line up to the right.

2Purchasing meal tickets

There is a ticket vending machine at the shop entrance; it has no photos and no English, difficulty level 3. Purchase meal tickets in advance. Menu includes Ramen for 1200 yen (350g pre-cooked noodles, 280g if requesting sukuname (less)), Pork Ramen for 1600 yen, yasai mashi (more vegetables) for 80 yen, abura mashi (more back fat) for 80 yen, raw egg for 100 yen, creamy flavored egg with chili oil for 120 yen, etc. If you order sukuname (less) noodles, you get a free raw egg or ginger sauce service. For calls (yasai (vegetables) / ninniku (garlic) / abura (back fat)), the staff will confirm "noodle amount, ninniku (garlic), yasai (vegetables), abura (back fat)" when you hand over your meal ticket, so please verbally state your preferences. Payment is cash only; cards, e-money, and QR code payments are not accepted.

3Seating and receiving

There are only 8-9 counter seats. Staff will guide you to an empty seat. Serving takes about 10 minutes, which is standard speed for a Jiro-style shop.

4Other

The soup is an emulsified, rich pork broth with a well-balanced, non-salty soy sauce flavor. The noodles are homemade, slightly firm, and have a dense wheat texture. Compared to the main store in Oyama, there are differences in the amount of yasai (vegetables) and the firmness of the noodles; the noodles at the Asakusa branch tend to be more highly rated. Toppings include pork (firm yet tender), yasai (soft-boiled vegetables), abura (plain back fat), naruto (fish cake), and quail eggs, which is a classic Jiro-style composition with a retro touch of naruto. Eating the abura (back fat) mixed with the noodles allows you to eat a lot without feeling heavy, indicating good quality fat usage. Staff service is polite, and there's a calm atmosphere for dining without the typical tense vibe often found in Jiro-style shops.
