Kaneda is a specialty restaurant for niboshi chuka soba (sardine-based ramen) and extra-thick flat tsukemen (dipping noodles), located in "Ramen Battleground Tokyo Marunouchi" on B1F of JP Tower (KITTE Marunouchi), very close to Tokyo Station. As a sister restaurant to the popular ramen shop "Damena Rinzin" in Ningyocho, Kaneda focuses on a delicate balance of niboshi (dried sardines) and soy sauce. It has gained outstanding popularity in the competitive Yaechika/KITTE area, earning a high rating of 3.68 on Tabelog, ranking in the TOP 5000. On weekend afternoons, lines of about 30 people form, and it's common to see a continuous stream of waiting customers even 30 minutes after opening. The signature menu features two main dishes. One is the "Niboshi Chuka Soba," a delicate bowl with a deep amber soup where the broth, made from five types of niboshi, delivers a direct aroma, and layers of umami unfold on the tongue. Toppings include thinly sliced, pink, low-temperature cooked chashu, hoshimenma (bamboo shoots), shredded white leek, and yuzu peel, creating a composition where the "yang" of citrus cuts through the "yin" of niboshi. The noodles are supple, thin, and straight, with a pleasant wheat aroma spreading in the mouth with each bite. The other signature dish is "Hirauchi Zarusoba" (tsukemen), featuring impressive extra-thick flat noodles reminiscent of himokawa udon. Served piled high in a wooden bowl, these noodles boast a unique wheat texture that combines both chewiness and firmness. The dipping broth is soy-sauce based with rich chicken and dried bonito flavors, and as you eat it with the noodles, a subtle yuzu aroma follows. The side dish, "Kuroge Wagyu Gohan" (A5 rank, using wagyu from Hiyama, a long-established sukiyaki kappo in Ningyocho), is a luxurious item with rare-cooked beef mixed with Nagoya Cochin egg yolk, making for a highly satisfying set when combined with ramen. A unique service at this restaurant is the unlimited use of nori (seaweed), raw egg, nira kosho (garlic chive pepper paste), and katsuobushi (bonito flakes) on the table. 1Before entering
Located about 3 minutes walk from Tokyo Station, on B1F of JP Tower (KITTE Marunouchi) in the "Ramen Battleground" area. Even during early weekday afternoons (11 AM - 12 PM), there's usually a line of 3-10 people. On Saturday afternoons and Sundays around 1 PM, lines can reach 20-30 people. Lines start forming around 10:40 AM before opening, and after entering, expect to wait 10-30 minutes to purchase a meal ticket and be seated. It's relatively easier to get in around 12 PM on weekdays or after 5:30 PM in the evening. The restaurant closes on KITTE's irregular closing days, so it's advisable to check beforehand.
2Purchasing meal tickets and ordering
There's a ticket vending machine outside the shop, so purchase your meal ticket before joining the queue. The menu offers multiple options like the signature "Niboshi Chuka Soba," "Hirauchi Zarusoba" (Tsukemen), "KANEDA Men Special," and "Sudachi Kombu-sui Tsukemen," alongside various side dishes such as "Kuroge Wagyu Gohan," "Hirauchi Zarusoba Kuroge Wagyu Gohan Set" (1,850 yen), and "Tamago Kake Gohan." Pre-purchase: Buy your meal ticket at the vending machine before joining the end of the line. Payment is only accepted in cash and transportation IC cards (Suica/PASMO, etc.); credit cards and QR code payments are not available.
3Seating and receiving your order
The layout consists of a U-shaped counter with 12 seats and 2 tables. Solo diners are mainly guided to the counter, while groups are seated at tables. After being seated, a teacup and self-serve tea are available on the table. Your order will be served 5-10 minutes after handing your meal ticket to the staff.
4Other
Nori, raw egg, nira kosho, and katsuobushi are available for free and unlimited use at the table. When combined with the Kuroge Wagyu Gohan side dish, breaking in a raw egg creates a sukiyaki-style eating experience that further enhances the flavor. Nira kosho has a strong garlic punch even in small amounts, so it's recommended to try just a tiny bit first. Adding nori midway through your meal and wrapping it with the noodles allows you to enjoy changes in flavor and texture. Information on temporary closures is announced on the official Instagram.

人形町のラーメン店、駄目な隣人の姉妹店で、夏の限定麺をすすりに。
写真はすだち昆布水つけ麺と、A5黒毛和牛ご飯。
昆布水は弱めで、ひもかわうどんの様な幅広の麺がまずまずの美味さ。
