Overview
Korindo is a clear chicken broth ramen shop located in the office district south of Shimbashi, near Onarimon, operating only on weekdays during lunch hours. The clear soup, made primarily from Hinai Jidori and other brand chicken carcasses, combined with pork knuckle and several types of dried seafood flakes, is blended with a tare (seasoning sauce) made from four types of wooden barrel soy sauce. The salt content is moderate, resulting in a refined taste that makes you want to keep drinking it. The menu includes Shoyu Soba (soy sauce ramen) and Shio Soba (salt ramen), with each also available in a "Wafu Dashi" (Japanese-style broth) version made solely from seafood dashi without any animal products. The Wafu Dashi offers a gently permeating flavor of various dried seafood flakes, dried sardines, and kelp. Noodles are from Kanno Seimenjo, and a distinctive feature is the choice between thin noodles and thick noodles. The thin noodles are straight with whole wheat flour, while the thick noodles are flat, firm yet chewy, allowing you to choose based on your preference or mood. Toppings include two types of chashu (braised pork shoulder loin and chicken breast), crunchy extra-thick menma (bamboo shoots), and seasoned egg. The lunch set comes with a mini chashu-don (pork chashu rice bowl). A subtle hint of yuzu peel adds a refreshing finish to the aftertaste. Despite being run by a single owner, the shop shows careful consideration with details like hangers and acrylic partitions.
How to Order
1Before Entering
About a 5-minute walk from Toei Mita Line Onarimon Station A4 exit, or a 10-minute walk from JR Shimbashi Station. Open only on weekdays during lunch (approximately 10:50 AM to 3:00 PM), closed on Saturdays, Sundays, and national holidays. During peak lunch hours, a line forms outside the shop, and customers are called in by staff through the window. If you need to exchange bills, it's advisable to do so early while waiting in line.
2Purchasing Meal Tickets & Ordering
After entering, purchase meal tickets from the vending machine inside the shop. Since the vending machine does not have food photos or English descriptions, it is advisable to familiarize yourself with menu items such as Shoyu Soba, Shio Soba, Wafu Dashi Shoyu/Shio, and the lunch set beforehand. When handing your ticket to the staff, you will be verbally asked whether you prefer thin noodles (hosomen) or thick noodles (futomen). For first-timers, thin noodles are often recommended by the shop and are a safe choice. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating & Receiving Order
It is a small shop with only counter seating, managed by the owner alone. It takes about 5 to 10 minutes from ordering to receiving your food. Even if customers leave, please wait at your seat until you are called by the staff.
4Other
The mini rice bowl in the lunch set is a pork chashu-don for the first customers, after which it changes to a chicken chashu-don. Be aware that the chicken chashu is aggressively low-temperature cooked, so if you don't prefer very moist meat, take note. We also recommend eating it like chazuke (rice with tea/broth) by dipping it in the soup.
