Located in the office district of Shimbashi 5-chome (near Onarimon), this ramen shop operates only on weekdays during lunchtime. Their signature dish is Shoyu Ramen, featuring a clear soup (Chintan) made from Hinai-Jidori (Hinai chicken) and other brand chicken bones, along with several types of dried bonito flakes. This is combined with a 'kaeshi' (tare) made from four types of wooden-barrel aged soy sauce. Both Shio (salt) and Shoyu (soy sauce) ramen also offer a 'Wafu Dashi' (Japanese-style broth) variation, primarily seafood-based. Noodle options include hand-kneaded flat thick noodles and low-hydration straight thin noodles from Kanno Seimenjo. After purchasing your meal ticket from the vending machine, you inform the staff whether you prefer thin or thick noodles when handing them your ticket. Lunch sets come with a mini chashu rice bowl. With only 7 counter seats and operating only at lunchtime, expect to queue outside during peak hours. The ticket machine has no photos or English descriptions, and payment is cash only.
