Kyo Ramen Sadakazu
京ラーメン さだかず
Overview
A phantom ramen shop located underground in Gion, open for just three hours from 10 PM to 1 AM. With only 4 counter seats, the owner single-handedly manages a rotational seating system. A waiting list is placed outside around 9 PM for guests to sign up and await their turn. The menu features only two items: Regular (1000 yen) and Special (1200 yen), with the difference being how the chashu cut influences the soup's flavor. It's a quintessential Kyoto-style bowl: a refined yet refreshing soy sauce broth with a hint of back fat, generously topped with Kujo green onions. Engaging in conversation with the friendly owner is also a highlight. This hidden gem is frequented by repeat customers from overseas, known only to those in the know.

How to Order
1. **Sign Up (from around 9 PM)** A sign-up sheet is placed outside the shop before opening at 10 PM. Write your name and wait for your turn. 2. **Entry (Rotation System)** The shop uses a rotation system — all guests eat together, and the next group enters after everyone has finished. Wait nearby until your name is called. 3. **Ordering** Once seated, the master will explain the two menu options: Regular (¥1,000) and Special (¥1,200). The difference is the type of chashu, which changes the soup flavor. Order directly by telling the master your choice.
