This is a tsukemen (dipping ramen) shop located in the "Ramen Battleground" on B1F of KITTE Marunouchi, directly connected to Tokyo Station. It inherits the lineage of "Chukasoba Tomita," a super famous shop in Chiba. With a history of training at Taishoken (Kazuo Yamagishi), photos of Mr. Yamagishi are displayed inside the shop. The signature dish is rich tonkotsu (pork bone) gyokai (seafood) tsukemen, featuring a thick, mild pork bone broth like curry, combined with the rough texture of seafood and fish powder. The extra-thick straight noodles, made with whole wheat flour, boast a sweet wheat flavor and strong chewiness, so perfected that they can be enjoyed on their own. You can increase the noodle portion by 50g for an additional 50 yen from the regular size. They also offer thick char siu (braised pork) made with Kashiwa Gensou Pork, carefully selected chashu with four different cuts prepared in various ways, and Taishoken-style "Original Tsukemen (Mori Soba)". The meal concludes with a mellow soup-wari (dilution) using Japanese dashi (broth) and yuzu (Japanese citrus).
How to Order
1Before Entering
Located on B1F of KITTE Marunouchi, a 2-minute walk from Tokyo Station. This is a popular shop, so queues tend to form both at lunch and dinner; expect about 10 minutes wait on weekday afternoons, and sometimes over 10 people waiting in the evening. The shop prioritizes turnover, so using smartphones during meals is discouraged. Business hours are Mon-Fri 11:00-22:00, Sat-Sun-Holidays 11:00-21:00.
2Purchasing Meal Tickets & Ordering
Purchase meal tickets from the touch-panel vending machine (with photos). When crowded, line up and purchase your meal ticket from the vending machine when your turn approaches. You can increase the noodle portion by 50g for an additional 50 yen from the regular size. Payments can be made with cash and transportation IC cards (such as Suica), but credit cards and QR code payments are not accepted.
3Seating & Receiving Your Order
There are 27 counter seats arranged side-by-side. Service is quick, but during peak hours, customers are seated sequentially.
4Other
It is recommended to first taste a few strands of noodles on their own to enjoy their wheat sweetness before dipping them into the rich broth. The meal concludes with a soup-wari (dilution) of Japanese dashi and yuzu. The shop's style is to refrain from using smartphones during your meal and to promptly vacate your seat once you have finished.
