It's a double soup with a rich animal base (pork bone, pork thigh, chicken bone, chicken) layered with seafood elements (mackerel flakes, dried sardines, other flakes). It has a thick mouthfeel, first offering a seafood aroma, followed by the richness of the animal base. A classic flavor change is to dissolve yuzu jelly mid-meal, adding a refreshing citrus note that brings gentleness to the punchy flavor. The noodles are homemade, medium-thick straight, made with whole wheat flour, and their grayish hue adds depth to the soup. The toppings are uniquely composed of smoked char siu (slow-cooked, moist), thinly sliced burdock root, chopped purple onion, and green onions. The inclusion of thinly sliced burdock root in ramen is considered a rare and noteworthy component. The Shiraoi Beef Sukiyaki Don, a popular side dish, offers a rich combination of wagyu umami and a mellow egg yolk.
