1Before entering

It is located on the 1st floor of a building along the main road, a 5-minute walk from Kita-24-jo Station. Although it opens at 11:00, there is often a line before opening, and on holidays, it's not uncommon to see more than 10 people waiting. Business hours are split into two parts: 11:00-15:30 and 17:00-20:00, with a break from 15:30-17:00. Tuesdays are regular closing days, and there may be irregular closures, so it's best to check the official X (Twitter) for the latest information before visiting.

2Purchasing meal tickets and ordering

Queue at the end of the line outside the shop. When it's your turn, staff will guide you inside. You buy meal tickets from the vending machine immediately after entering (post-purchase system). Payment is cash only; cards, e-money, and QR code payments are not accepted. The ticket machine displays menu photos but has no English descriptions, so narrowing down your order beforehand will make it easier to choose. The two main specialties are "Se-abura Niboshi" (back fat dashi with dried sardines) (from 1,100 yen) and "Hokkaido Sandai Kombu-sui Tsukemen" (three great Hokkaido kelp water dipping noodles) (from 1,400 yen). Monthly limited-time menus are also available on the ticket machine. Many customers order the side dish "Shouki-don" (Shouki bowl) (500 yen / half 350 yen) as well.

3Seating and receiving your order

When you hand over your meal ticket, the staff will immediately send your order to the kitchen. There are a total of 10 seats: 4 counter seats and 1 table for 6 people (with dividers for every 2 people). The estimated serving time is generally 5-10 minutes, indicating a fast turnover.

4Other information

For Kombu-sui Tsukemen, you are guided through a four-stage eating method: first, eat the noodles with the kelp water without dipping in anything; next, dip them in the soup; then, change the flavor with table condiments like lemon, yuzu kosho, apple vinegar, Kyoto Gion "Kuro Shichimi" (black seven-spice blend) and "Ichimi" (chili powder); finally, dilute the dipping soup with wari-dashi (soup stock) to finish. With Se-abura Niboshi, you can enjoy changing the aroma and spiciness with toppings like nori (seaweed) and chopped onions. The shop temporarily closes during the midday break, so it's safer to enter while checking the clock to ensure it hasn't entered the break time.
