"Men-ZIN Saito" is a Wagyu ramen specialty shop spearheaded by Yutaka Saito, the first RIZIN Featherweight Champion. It was established in Akihabara after raising funds through crowdfunding, with Saito teaming up with Mr. Ito, a ramen chef with 13 years of experience at a popular downtown shop. The shop's name is a playful take on "RIZIN". The interior, featuring only a U-shaped counter with 10 seats, showcases a championship belt displayed beside the seats. During lunchtime, the shop specializes in Wagyu Paitan Tanmen. The Paitan (creamy white) soup, slowly simmered from Wagyu beef, is surprisingly creamy and mellow with no lingering heaviness, despite its rich appearance. It takes the concept of Nagasaki Champon soup, making it even smoother and condensing its umami. Each bowl is generously topped with cabbage, bean sprouts, carrots, chives, and onions stir-fried vigorously with beef fat. The noodles are custom-made medium-thick wavy noodles (chutabuto chijire-men) from Asakusa Kaikaro, offering a chewy texture that beautifully coats the soup. In the evening, the specialty shifts to Wagyu Gyushi Mazesoba (mixed noodles). This dish is enjoyed by dipping the noodles into a unique, meringue-like dipping sauce (tsuke-jiru) to introduce a change of flavor (ajien). Adding Cha-gyu (roast beef-style rare chashu, 400 yen) further elevates the dish's perfection. The "Tsuigeki Powder" available on the table offers a garlic-flavored change of flavor; sprinkling it from the start allows for a consistent taste experience throughout the meal. A playful touch includes a "Kansha no Kiwami" (ultimate gratitude) message appearing at the bottom of the bowl, and there are even days when Mr. Saito himself greets customers at the shop.
How to Order

2-minute walk from Tokyo Metro Hibiya Line Akihabara Station Exit 4, 3-minute walk from JR Akihabara Station Showa-dori Exit. The restaurant operates in two shifts: lunch from 11:00 AM to 3:00 PM (for Wagyu Paitan Tanmen only) and dinner from 6:00 PM to 9:00 PM (for Wagyu Beef Fat Mazesoba only), with menus completely switching between time slots. As a Wagyu ramen specialty store operated by Mr. Yutaka Saito, the first RIZIN featherweight champion, long lines form daily, and ticket sales may start 30 minutes before opening in order of arrival, so it's safest to line up an hour before opening if you want to be sure to get in.
2Purchasing meal tickets and numbered tickets
The entry rule is a unique 3-stage flow: ① Purchase meal tickets inside the store ② Receive a numbered ticket from staff after purchasing meal tickets ③ You will be called in order of your numbered ticket. Signature items include Wagyu Paitan Tanmen (1100 yen), Ra-gyu (300 yen), Cha-gyu (400 yen), Sakihokore Rice (200 yen), and limited menus such as Wagyu Rich Tsukemen also appear. Payment can be made by credit card (VISA/Master/JCB/AMEX/Diners), transportation IC cards, or cash, but QR code payment is not accepted.
3Seating and receiving your order
There are only 10 U-shaped counter seats, with champion belts displayed next to the seats. You will be guided in when your numbered ticket is called and served immediately after being seated.
4Others
Video recording and pose/peace sign photos are prohibited, so please enjoy posting to SNS with regular still photos. The "Suigeki Powder" on the table is a garlic-flavored seasoning for changing the taste, which is good to add later, but you can also enjoy a consistent flavor throughout if you add it from the beginning. Adding Cha-gyu (roast beef style rare char siu, 400 yen) is a popular topping that significantly increases satisfaction. A playful message "Thanks to the utmost" (感謝の極み) appears at the bottom of the bowl.
