麺処ぐり虎 名古屋栄
Overview
Nagoya Sakae branch of Guriko series, located on the 1st floor of Maruei Galleria in the heart of Nagoya Sakae. Its signature dish is the 'Chicken Shio Ramen' (880-1,050 yen), featured in the Michelin Guide. This ramen boasts a clear, golden chicken broth enriched with chicken oil, a refined composition of thin straight noodles, chicken chashu, a seasoned egg, shredded green onions, mizuna, and yuzu, bringing out the unique delicacy of shio ramen. In addition to the signature chicken shio, the extensive lineup includes 'Special Red Chicken Shio Ramen' with a spicy kick, 'Special Black Truffle Scented Shoyu Ramen' combining six carefully selected soy sauces and truffle, the autumn/winter limited 'Tonkotsu Gyokai Ramen', summer limited 'Mala Kombu Water Tsukemen', 'Tonkotsu Gyokai Tsukemen', 'Spicy Mazesoba', and 'Aburasoba', offering an astonishing variety that keeps repeat customers coming back for more. Nori seaweed and raw eggs are available all-you-can-eat at the table, which further enhances satisfaction when paired with rice-based side dishes. The shop also provides a rich array of unique table condiments such as numbing-spicy spice, garlic, chili oil, orange vinegar, and bonito flakes, allowing customers to customize their ramen to their liking. Open until 1 AM, it caters to the demand for late-night ramen in Sakae.

1Before entering
About a 5-minute walk from Sakae Station (Higashiyama Line/Meijo Line), exit Sakaechika S8 and walk along Princess O-dori. It's a street-level shop on the 1st floor of Maruei Galleria. The bright glass exterior makes it look like a cafe, easy to enter even for first-timers. During peak hours, there might be a queue of about 4 people outside and a queue for the ticket machine inside, so expect a 5-10 minute wait. Business hours are long, from 11:00 AM to 1:00 AM the next day (L.O. 0:30 AM), accommodating late-night dining or a final ramen in Sakae.
2Purchasing a meal ticket
Immediately to the right upon entering is a touch-panel meal ticket machine. Menus have photos, making visual selection easy for first-timers. While the signboard menu outside has foreign language descriptions, the ticket machine inside is primarily in Japanese. Centered around “Tori Shio Ramen,” there are nearly 20 kinds of ramen, including Special, Akai (Red), Truffle Shoyu, Tonkotsu Gyokai, Tsukemen, Mazesoba, and Aburasoba. It's recommended to decide on your preference before visiting to avoid confusion. Large (oomori, large size) and extra-large (tokumori, extra large size) noodle portions are free. Special sets and side rice bowls (Mentaiko Rice, Aburi Char-Mayo Don, Yakisuki Don, Tori Shio Don) can also be selected via the ticket machine. Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and receiving
The interior has 24 seats, mainly counter seats, with a few table seats in the back, making it easy for solo women or pairs to enter. Staff will guide you to an empty seat; place your meal ticket on the counter and wait. Service is quick, with ramen arriving in about 5-10 minutes.
4Other
Nori (seaweed) and raw egg are set on the table for free and all-you-can-eat, allowing you to enjoy them even more if you order a rice-based side. A variety of table condiments are available, including numbing spicy powder, garlic, chili oil, orange vinegar, and bonito flakes. Especially when ordering tsukemen or aburasoba, it's common to change the flavor halfway through. Minor requests like “soup hot” (suupu atsume, hot soup) are also possible.
