Mendokoro Honda Akihabara, originally founded in Higashijujo, Kita-ku in 2009 and relocated to its current location, just a 0-minute walk from Akihabara Station, in 2020, is a renowned Tokyo representative of shoyu ramen (soy sauce ramen). It is known as a popular restaurant that consistently maintains a Tabelog score of around 3.80, frequently appears on Tabelog's "Ramen Hyakumeiten" (Top 100 Ramen Shops), and always has a line outside, day and night. The shop features a stoic black exterior resembling a research facility, and a quiet, minimalist interior. The soup is a "Triple Chintan" (clear broth), combining animal-based broth from chicken and pork, Japanese-style dashi from bonito flakes, dried ingredients, and niboshi (dried sardines), and shellfish broth from clams and oysters. This is then paired with a shoyu dare (soy sauce seasoning) blended from five types of soy sauce, including three kinds of nama-shoyu (raw soy sauce), creating a delicate yet distinctly defined bowl. The noodles are homemade, medium-thin and straight, made with an in-house noodle machine, blending three types of wheat: "Haruyo Koi," "Haruyutaka," and "Men Seiryu." They are crafted to be well-integrated with the soup while allowing the aroma of wheat to stand out. Each topping makes a strong statement. The "Tokusei" (special) option features three types of chashu: chicken thigh, pork thigh, and either hanging-roasted pork shoulder loin or fried and seared pork belly. How to Order
1Before Entering the Restaurant
0 minutes walk (42m) from the Central Exit of Akihabara Station on the JR Yamanote, Keihin-Tohoku, and Sobu Lines. A street-level shop in front of Akihabara Station, marked by its austere black exterior. There are often lines outside, regardless of weekdays (lunch/dinner) or weekends; waiting 30-60 minutes during peak hours is not uncommon. Online reservations are available via TableCheck (fee 500-700 yen), which is recommended on rainy days or when time is uncertain. Closed on Wednesdays. Open for lunch only on Mondays. On Tuesdays, Thursdays, Fridays, Saturdays, Sundays, and holidays, it operates in two shifts: lunch (11:30-15:00) and dinner (18:00-21:00).
2Purchasing Meal Tickets / Ordering
Do not buy meal tickets first; this is a "pay-later" system where you first line up at the end of the queue (or designated spot inside the shop) and wait for your turn. Proceed to the ticket machine inside the shop to purchase your meal ticket when instructed by staff. Do not go to the ticket machine beforehand; wait for staff instructions. The ticket machine has no English descriptions or photos; all menu items are in Japanese. Featured items include Tokusei Shoyu (Special Soy Sauce Ramen) (¥1,700), Shio (Salt Ramen), Shio Tsukemen (Salt Dipping Noodles), and seasonal limited-time cold ramen/tsukemen variations. Payment is cash only; QR codes, e-money, and cards are not accepted.
3Seating and Receiving Your Order
Total of 18 seats: 4 counter seats, 2 tables for 4 people, and 3 tables for 2 people. Take the seat you are guided to by staff and hand over your meal ticket. Each bowl is carefully prepared and served, so service may take a little longer during busy periods. Water, disposable chopsticks, and paper aprons are self-service.
4Other Information
For Shio Tsukemen (Salt Dipping Noodles), the noodles are coated with kombu dashi water. A "3-stage eating method" is recommended: first, taste 1-2 strands of noodles plain; next, add a pinch of the accompanying sea salt to the noodles; finally, dip the noodles with the soup in the tsukedare (dipping sauce). For soup-wari (suupu-wari) (diluting the dipping sauce at the end), tell the staff and they will dilute your dipping sauce for you. Wonton topping (¥250 for 2 pieces) is also a popular option.
