Mendokoro Mazeru
麺処 マゼル
Overview
Mendokoro Mazeru is a specialty restaurant for Jiro-kei mazesoba (Jiro-style soupless ramen), conveniently located on the second floor (mezzanine) of a building behind a parking lot, just a 1-minute walk from JR Akihabara Station in Kanda Sakuma-cho. Their signature Mazesoba Shoyu (soy sauce soupless ramen) (regular 200g, 950 yen) features the classic Jiro-kei mazesoba visual: a mountain of bean sprouts with a touch of cabbage, thick cuts of pork chashu, and an egg yolk in the center. The shoyu tare (soy sauce base) accumulated at the bottom is not as heavy as it looks, striking a perfect balance of savory, sweet, and oily without being too salty or too sweet. Breaking and mixing the egg yolk instantly accelerates its mellow richness. The noodles are thick, wavy, and delightfully chewy (washi-washi texture), offering an enjoyable textural contrast when eaten with the crisp bean sprouts. It's especially delicious when the noodles absorb the kaeshi (seasoning sauce) thoroughly after an "aji karame call" (request for stronger flavor). The pork is thick and chunky, offering a satisfying chew rather than a melt-in-your-mouth (horo-kei) texture. A unique system allows customers to make "calls" (requests) for toppings (yasai/vegetables, abura/fat, ninniku/garlic, cheese, aji karame/stronger flavor) when handing over their meal ticket. The option of free cheese as a topping is a particularly rare feature among other shops. Adding coarsely ground black pepper from the table during the latter half of the meal creates an effective ajin-hen (flavor change). With variations like shio (salt) flavor, extra meat (niku mashi), and special large portions (tokumori) of 300-400g, this shop is a valuable find near Akihabara Station where you can easily enjoy high-quality Jiro-kei mazesoba.
How to Order
1Before Entering
Located behind the parking lot in Kanda Sakuma-cho, a 1-minute walk from JR Akihabara Station, the entrance can be a bit hard to find. It's easier to spot if you look for the parking lot. Mon-Sat 11:30-15:00 / 17:30-21:00, Closed Sundays and National Holidays. Around noon on weekdays is peak time with a full house and several people waiting outside; it's relatively easier to get in right after opening (11:30-12:00) or between 17:30-18:00.
2Purchasing Meal Tickets
There is a ticket vending machine at the entrance, operating on a buy-first system. No photos, no English notation, difficulty level 3. Signature dishes include Mazesoba Shoyu (Regular 200g) 950 yen, Mazesoba Shio, Niku-Mashi Mazesoba (mazesoba with extra meat), and Tokumori (extra large) 300-400g. A unique Jiro-style mazesoba flow where you orally tell the staff your "call" (yasai (vegetables) / abura (back fat) / ninniku (garlic) / cheese / aji karame (more sauce)) when handing over your ticket. The option to choose cheese as a free topping is a unique feature not found in other shops. Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and Receiving Your Order
Only 7 counter seats; service takes about 5-10 minutes. Three staff members manage the shop, ensuring good turnover. There are no hangers for coats, so place your jacket on your lap or the back of your chair.
4Other Information
Coarsely ground black pepper is on the table; sprinkling it on in the latter half enhances the flavor's sharpness. The pork is chunky and thick with a distinctive chewiness; adding cheese topping instantly gives it a junk food feel. Breaking the egg yolk and mixing it with the noodles accelerates the mildness, allowing for a two-stage enjoyment. The noodles are thick, chewy, wavy noodles; they are especially delicious when they absorb the tare (sauce) thoroughly after an aji karame (more sauce) call.
