Mendokoro Niboshiko ASOBUILD
麺処 にぼし香 アソビル店
Overview
A ramen shop specializing in niboshi (dried sardine) broth, located on the 1st floor of "ASOBUILD", a multi-purpose complex directly connected to Yokohama Station's Minami-Higashi Exit passage, just a 2-minute walk from the station. It's a popular shop, selected for Tabelog's Ramen KANAGAWA Hyakumeiten (Top 100 Ramen Shops in Kanagawa) for two consecutive years in 2024 and 2025, and is widely known as a representative niboshi-style ramen shop in the Yokohama Station area. Their signature "Niboshi Soba" (1,000 yen) is a refined clear shoyu (soy sauce) broth, extracting only the umami of niboshi. While a rich aroma rises, harshness and bitterness are suppressed, leaving an amazingly clear aftertaste. The soup features thin straight noodles, low-temperature cooked pork chashu, diced onions, and iwanori (rock seaweed), simply arranged, with the refreshing coolness of the onions acting as a salty accent. For those seeking more impact, the classic route is to go for the "Noko Niboshi Soba" (1,150 yen), characterized by its grayish, thick, and rich broth. A unique pleasure of this shop is its wide variety of "Aedama" (seasoned extra noodles). Variations include pork back fat, oyster butter, crab miso butter, and black vinegar, and a method recommended by regulars is to first enjoy them as they are, then dip them into the niboshi soup for a second delight. Daily changing limited menus are also a highlight, with luxurious bowls such as Lobster Soba, Watarigani (swimming crab) Soba, Hiyashi Nodoguro (chilled blackthroat seaperch) Soba, and Mud Crab Soba appearing one after another, tailored to the season and ingredients. Taking advantage of its location in an entertainment district at night, the shop also offers Japanese sake, and on Friday nights, it operates as a "Sobamae" (pre-ramen appetizers) establishment where Japanese sake is a must, showcasing a unique operational style with two facets: ramen and a Japanese izakaya.
How to Order
(Check the official account below in advance for irregular closures and updates)
Official SNS:https://x.com/NiboshiYokohama
1Before entering
Located on the 1st floor of "ASOBUILD", directly connected from Yokohama Station's Minami-Higashi Exit underground passage, allowing you to reach it without getting wet in the rain. There can be queues during weekday lunch, but with only 11 counter seats, the turnover is good, and waiting times are usually around 10 minutes. It's relatively easier to enter during weekday late afternoon (2-3 PM) or weekday evenings around 9 PM. On Sunday afternoons, there might be about 6 people waiting outside. There is a break in service (4:00 PM - 5:00 PM).
2Purchasing meal tickets and ordering
There is a ticket vending machine at the entrance, offering the signature "Niboshi Soba," "Noko Niboshi Soba," "Men Half" (half portion noodles), daily limited menus, Aedama (back fat / oyster butter / crab miso butter / black vinegar, etc.), and toppings like quail egg ajitama. Pre-purchase: Purchase your meal ticket at the vending machine before joining the end of the queue. If you wish to order Aedama or additional toppings later, the policy is to purchase them via the vending machine, not by ordering from your seat. Payment methods include cash, various credit cards, transportation IC cards (Suica, Pasmo, etc.), iD, QUICPay, and QR code payments such as PayPay, d払い (d Pay), Rakuten Pay, and au PAY.
3Seating and receiving your order
There are only 11 counter seats. After handing over your meal ticket, take a seat at the counter and wait. Turnover is good, and it takes a few minutes to about 10 minutes for your order to be served. During peak hours, it might take a few more minutes from ordering to receiving your ramen.
4Other
There are no seasoning condiments on the table, so it's basic to first enjoy the balance of niboshi umami and saltiness as intended by the shop. For Aedama, the classic way to eat it is to first mix and enjoy it as is, then dip it into the remaining soup for a second delight. During evening service after 5 PM, the regular ramen menu switches to "kake" (ramen without chashu). In the evening, you can also use the shop for "Sobamae," pairing Japanese sake with small dishes. Information on temporary closures and daily limited menus is announced on their official X (formerly Twitter).
