Mendokoro Toritani
麺処 鶏谷
Overview
Opened in 2017 in Saiin, Kyoto, a renowned tori paitan (chicken broth) ramen shop known as a regular on the Ramen WEST 100 Famous Shops list. It's a craftsman-like establishment where the owner, Mr. Mitani, committed to no chemical seasonings, domestic ingredients, and homemade noodles, creates profound bowls solely through "ingredient combinations" within the constraints of being additive-free. The menu's five main pillars are: "Torisoba" (chicken broth soy sauce base, 900 yen, assari (light) clear soup), "Torishio Soba" (chicken broth salt base), "Jukusei Shoyu Torisoba" (aged soy sauce chicken soba, 930 yen, kotteri (rich/thick)), "Jukusei Shio Torisoba" (aged salt chicken soba), and "Tori to Ran'o Shoyu Mazesoba" (chicken and egg yolk soy sauce mixed noodles). Especially the kotteri (rich/thick) "Jukusei Shoyu Torisoba" is a chemical-free masterpiece with a thick, viscous texture reminiscent of Tenkaippin, where the noodles are almost lifted by the soup's density. Noodles are homemade, using different types for each dish, such as medium-thick flat wavy noodles and medium-thin straight whole wheat noodles. Toppings include seared pork chashu and moist low-temperature cooked chicken breast chashu, menma (bamboo shoots), chopped green onions, and wontons (thick skin to withstand the rich soup). The "Chicken and Roast Pork Butter Rice" (350 yen) is a popular side dish among regulars, with the fragrant aroma of seared meat and rich butter enhancing the ramen's umami. Weekly limited ramens (curry ramen, various mazesoba, seasonal specials, etc.) announced on Instagram are always a hot topic, keeping repeat customers engaged.

1Before Entering
Located near a residential area, 7 minutes walk from Keifuku Arashiyama Main Line "Yamanouchi" Station, and 15 minutes walk from Hankyu Kyoto Line "Saiin" Station. Open Monday-Friday 11:15-14:30 and 18:05-22:00, Saturday-Sunday/Holidays 11:00-15:00 and 18:00-22:00. While there are no regular holidays, the shop closes once items are sold out, so it is advisable to check the official SNS for daily operating status along with limited menu information before visiting. During peak hours (12:00-13:00 for lunch, 18:00-19:00 for dinner), there may be a short wait for a few groups, customers wait on benches inside the store. It is relatively easy to get in after 13:00 on weekdays or around 21:00.
2Purchasing Meal Tickets / Ordering
There is no meal ticket machine; orders are placed orally after being seated at the counter or a table. The five main signature dishes are Torisoba (900 yen, assari (light)), Torishio Soba, Jukusei Shoyu Torisoba (930 yen, kotteri (rich/thick)), Jukusei Shio Torisoba, and Tori to Ran'o Shoyu Mazesoba. Additionally, about four weekly limited items announced on Instagram (such as chicken giblet back fat soy sauce, pacific saury oil soba, seafood noodles, spicy meat miso oil soba, Toritani-style Tenkaippin-like ramen, etc.) are available. Side dishes (chicken and roast pork butter rice, chicken tataki, chicken yukhoe, chicken giblet stew, wonton 100 yen, ajitama egg 120 yen, etc.) are also abundant. Payment is cash only; credit cards, electronic money, and QR code payments are not accepted.
3Seating / Receiving Your Order
There are 12 seats (counter and tables), and the quick and efficient service by the owner and female staff ensures fast turnover. As two people manage the spacious interior, orders are served quickly, taking about 5-10 minutes, allowing for a smooth meal even late at night.
4Other
For those who prefer assari (light) ramen, "Torisoba" or "Torishio Soba" are recommended for a first visit. For those who prefer kotteri (rich/thick) ramen, "Jukusei Shoyu Torisoba" or "Jukusei Shio Torisoba" are suggested. Table condiments such as black pepper oil, special shichimi, and gochujang-style (Korean spicy miso) seasoning are available; adding them in the latter half of the meal allows you to enjoy a different flavor profile. The "Chicken and Roast Pork Butter Rice" (350 yen) is characterized by the fragrant aroma of seared meat before serving and is a classic pairing with ramen at the shop.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
