Overview
Opened in 2023 in Mibu-Moricho, Kyoto, a 5-minute walk from the north ticket gate of Hankyu Kyoto Line 'Saiin' Station, this rapidly growing ramen shop has been featured on TV and in magazines. The owner trained in Osaka before going independent. The stylish atmosphere features a chic space with only a 9-seat L-shaped counter and a concrete interior, making it easy for solo female diners to enter. The two main signature dishes are 'Shellfish Dashi Ramen' and 'Chicken Paitan Ramen'. The Shellfish Dashi features a luxurious composition with large clams, scallops, and hard clams primarily, offering an elegant shellfish umami condensed in a clear soup. The Chicken Paitan is creamy like a potage yet light in aftertaste, and you can change its flavor with black pepper oil. Additionally, monthly limited menus (such as clam and sea bream chilled tsukemen in April-May, squid paitan ramen during New Year's, seasonal sea bream paitan soba, local chicken and shellfish chuka soba) are announced on SNS monthly, keeping repeat customers interested and generating buzz. The 'Asa Ramen' (Morning Ramen) for 500 yen, available from 9:00 AM, is a great value morning ramen with sardine and shellfish dashi, served with a separate plate of rice balls, menma, and char siu, attracting attention as a new dish embodying Kyoto's morning ramen culture. During happy hour from 17:00 to 19:00, ordering Tokujo Chicken Paitan Soba or Tokujo Shellfish Dashi Soba comes with a free aburi niku sushi, a unique offering that is also well-received.

1Before entering
Located in a residential area, a 5-minute walk from Hankyu Kyoto Line 'Saiin' Station North Ticket Gate, and a 1-minute walk from Kyoto City Bus 'Shijo Omiya Dori' bus stop. Open daily from 09:00 to 16:00 (L.O. 15:30) and 17:00 to 21:00 (L.O. 20:30), operating year-round with no regular holidays. It opens early for morning ramen, attracting many customers for the 500 yen Asa Ramen available from 9:00 to 10:30. It's a small shop with only 9 L-shaped counter seats, so there might be a queue outside during peak hours (12-1 PM for lunch, 6-8 PM for dinner), where you'll wait on an outdoor bench.
2Purchasing meal tickets
There is a ticket vending machine at the entrance, so you purchase tickets upon entering. The machine has no photos or English, so first-time visitors may find it easier to decide if they check the menu beforehand (signature Chicken Paitan Ramen 1,000 yen, Shellfish Dashi Ramen 1,100 yen, Tokujo Chicken Paitan Soba / Tokujo Shellfish Dashi Soba 1,350 yen each, Asa Ramen 500 yen, monthly limited noodles, sides like tuna bowl and rice balls, various kaedama (extra noodle), additional toppings). Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and serving
Hand your meal ticket to the staff, and you'll be guided to an empty seat at the 9-seat L-shaped counter. The interior features a chic, bare concrete design and an open kitchen where you can watch the noodles being boiled. The owner and female staff prepare dishes carefully and quickly. Service is fast, typically a few minutes to 10 minutes, ensuring good turnover.
4Other
Each signature ramen comes with a special flavored oil for customization, such as black pepper oil for Chicken Paitan and basil oil for Shellfish Dashi; adding it later dramatically changes the flavor. The monthly kombu-sui tsukemen (kelp-water dipping noodles, either Chicken Paitan or Shellfish Dashi) is served with noodles loosened in a separate bowl of kombu-sui, and a re-heating service for the dipping broth is also a welcome feature. During happy hour from 17:00 to 19:00, ordering Tokujo Chicken Paitan / Tokujo Shellfish Dashi comes with a unique free service of aburi niku sushi (seared meat sushi, salt or sauce), making it recommended to visit during early evening hours.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
