Overview
Located in Sakae, Nagoya, this is a beef bone ramen shop specializing in wagyu and beef bones. It is the second brand of 'Shurakutei Kuuan', known as a famous duck broth restaurant in Midori Ward, and its signature dish is 'Wagyu Shio Ramen'. The soup, made from Kuroge Wagyu beef bones combined with Dounan Ma-kombu seaweed and Himi-produced dried sardines, is milky white and mellow, with a distinct richness and sweetness characteristic of beef, yet almost no unpleasant smell. It has a unique flavor that resembles both tori paitan (chicken broth) and tonkotsu (pork bone broth), and many say it's a bowl they've never tasted before. The thin, smooth, and chewy noodles, made with high hydration, lift the soup well, and toppings include tender shabu-shabu style wagyu, aromatic roast beef, and well-seasoned daikon radish and turnip. The biggest highlight is the fermented seasonings in syringe-shaped containers on the table, allowing you to enjoy changes in flavor by adding small amounts of several types, such as Aomori garlic x rice koji, onion x grape vinegar, and Mikuniyama green chili x hishio. 1Before Entering
Located on the 1st floor of Sakae Green Building, about a 5-minute walk from Sakae Station in Sakae, Nagoya. Look for the black cow silhouette on a white wall. It's a calm space with exposed concrete, rarely has a line, and you can usually get in relatively smoothly day and night. Closed on Mondays, and only open for lunch on Sundays.
2Purchasing Meal Tickets & Ordering
There is a ticket machine at the entrance. Purchase your meal ticket here before proceeding to your seat. Since the ticket machine has no photos or English, it's best to check the "Wagyu Shio Ramen" sign as a guide, along with options for "Tokusei" (special/deluxe) and other toppings. "Tokusei" includes more toppings, and the price difference from the regular version is small, so choose according to your preference. "Aedama" (seasoned extra noodles) is only available during evening hours. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating & Receiving
There are only 11 L-shaped counter seats. A staff member will guide you to your seat and take your meal ticket. Estimated serving time is around 10 minutes.
4Other
Several types of fermented seasonings in syringe-shaped containers are available on the table. Since they greatly affect the soup, take a small amount of soup with your ladle, add the seasoning little by little, and find your preferred taste. Aomori garlic x rice koji is a popular choice. Rice is free during lunchtime. "Aedama" or "dashi chazuke" (soup over rice) can be added to finish your meal.
