Mensho Shisei
麺匠 至誠
Overview
"Mensho Shisei" stands in an outstanding location, just a 30-second walk directly connected to Yotsubashi Station Exit 2 in Shinmachi, Nishi Ward, Osaka. Located in the tranquil area of Yotsubashi Building B1F, this skilled establishment specializes in delicate bowls featuring shellfish and seafood, such as hamaguri (clams) and kamasu niboshi (barracuda dried sardines), as their main stars. Their signature Hamaguri Shio Ramen (clam salt ramen) features a deep soup with concentrated clam umami, combined with chewy, medium-thin noodles. The soup has a clear profile yet a gentle roundness, crafted with an aesthetic of subtraction that trusts the power of the ingredients. While tempting to drink the soup entirely on its own, it is designed to truly shine when paired with the noodles. The Special Kamasu Niboshi Tsukemen (barracuda dried sardine dipping noodles) consists of flat, medium-thick noodles soaked in kombu (kelp) water, paired with a niboshi shoyu (dried sardine soy sauce) soup where the umami and sweetness of barracuda dried sardines overlap. The classic three-stage eating method involves: first, enjoying the noodles on their own with the accompanying pink rock salt like somen; then, dipping the noodles in the niboshi soup; and finally, finishing with a soup-wari (soup dilution) to drink the remainder. This highlights the perfection of both the noodles and the soup. With 18 seats in total (6 at the counter and 12 at tables), and despite being cash-only, its direct connection to Yotsubashi Station and helpful temporary closure announcements on its official X account make it a representative establishment of the "quietly impressive" ramen in the Shinsaibashi area.
How to Order

1Before entering
Directly connected to Exit 2 of Yotsubashi Station on the Osaka Metro Yotsubashi Line (30 seconds walk, 124m). From Shinsaibashi Station or Midosuji Line, it's a 2-4 minute walk via Crysta Nagahori. Open Mon-Fri 11:00-14:30 and 17:30-20:00, Sat 11:00-14:30. Closed on Sundays and public holidays. The shop closes when the soup runs out, and it may also be closed on Mondays about twice a month. Information on temporary closures is announced on Instagram. On weekdays, you can often get a seat immediately after opening, but there may be a wait outside during peak hours.
2Purchasing meal tickets / Ordering
A ticket vending machine is installed inside the shop. It has photos and English explanations, making it a beginner-friendly design with a difficulty level of 1. Signature items include the clam shio ramen, special barracuda niboshi tsukemen (noodles in kombu dashi), and seasonal limited-time menus. Payment is cash only; QR payment, e-money, and cards are not accepted. If there is no line, enter and use the ticket machine immediately. If it's crowded, join the end of the line and wait for instructions.
3Seating and receiving
There are a total of 18 seats: 6 counter seats, two 4-person tables, and two 2-person tables. Staff will guide you to an empty seat; hand over your meal ticket. Due to the careful preparation, it takes about 5-10 minutes for your ramen to be served.
4Other
The signature clam shio ramen combines a deep-flavored salt soup condensed with clam umami and springy medium-thin noodles. Believing in the power of the ingredients, the subtractive composition highlights the clam flavor. For the special barracuda niboshi tsukemen, a three-step eating method is recommended for the flat, medium-thick noodles soaked in kombu dashi: first, eat the plain noodles with pink rock salt like somen; next, dip the noodles in the niboshi soup; finally, finish with soup-wari (broth dilution). Information on temporary closures can be confirmed on the official X (@jikon34).
