Menya Appare Domannaka Nishiki Mujuku
麺屋 あっ晴れ どまん中錦 無熟
Overview
A 10-seater Jiro-style mazesoba (soupless ramen) specialty shop in the Nishiki-3 area of Nagoya. "Menya Appare Domannaka Nishiki", which has been operating since July 2010, was renovated in February 2026, transforming into a soupless specialty store with "Mujuku" (Soupless x Aged Sauce) added to its name. Its biggest feature is the use of special extra-thick wavy noodles sourced from Asakusa Kaikaro. Each strand is thick, and its wavy surface firmly holds the aged sauce, offering a satisfying "washi-washi" and "gowa-gowa" texture where the aroma of wheat and the outline of soy sauce emerge with every bite. The signature soy sauce has a depth like "layered soy sauce", where aged sauces overlap in multiple layers, making it taste richer with the third and fifth bites than with the first. Toppings include shredded pork chashu (not in block), thoroughly seasoned bean sprouts, coarsely ground pepper, and characteristic "pork soft bones" (豚軟骨) scattered throughout, providing a crunchy textural accent. When ordering, free customization is available with the standard Jiro-style "calls" forニンニク (ninniku, garlic), ヤサイ (yasai, vegetables), アブラ (abura, back fat), and カラメ (karame, more sauce), and Nagoya's unique size designation "dera-mori" (dera-mori, Nagoya dialect for "extra large") is also used. Derivative menus are wide-ranging, including "Do-Maze" with cheese and Baby Star ramen snacks, Spicy Jiro, shrimp mayonnaise topping, 6-Baka (600g) super large size, Spicy Tsukemen, and Pork Spicy series, etc. On the 26th of every month, "Jiro Day" offers free noodle upsize (with an upper limit). Many reviews also mention that the staff, though appearing reserved, provide polite service, making this a place that doesn't feel like the typical stern Jiro-style atmosphere.

1Before entering the shop
A street-level shop located in the Nishiki-3 entertainment district, about a 5-minute walk from Sakae Subway Station. It's a small place with only 10 counter seats. On weekends and holidays, it's relatively easy to get in, but on weekdays during peak hours, you might have to queue. Closed on Mondays, and open Tuesdays to Sundays from 11:00 to 14:00 and 17:30 to 21:00 (divided into lunch and dinner shifts). There is a break from 14:00 to 17:30, so avoid visiting during these hours.
2Purchasing meal tickets and ordering
Purchase a meal ticket from the vending machine at the entrance and hand it to a staff member. As there are no food photos or English descriptions, it is helpful to know the names of popular menu items in advance, such as the signature Shoyu (Soupless), Buta Mashi (extra pork), Do-Maze, Kara Jiro (spicy Jiro), and Kara Tsukemen (spicy dipping noodles). Choose your noodle portion size from Mini 125g, Small 250g, Large, or 6-Baka 600g; note that different ticket buttons correspond to different sizes. After handing over your meal ticket, when seated, a staff member will ask for your preferences forニンニク (ninniku, garlic), ヤサイ (yasai, vegetables), アブラ (abura, back fat), and カラメ (karame, more sauce), so respond according to the Jiro-style verbal "call" culture. Call options are "None / Normal / Mashi (mashi, more) / Mashi-mashi (mashi-mashi, double)"; for ヤサイ (yasai, vegetables), Nagoya's unique "dera-mori" (dera-mori, Nagoya dialect for "extra large") and "sukuname" (less) are also included. It is customary to state your preferences all at once, such as "Ninniku normal, Yasai sukuname, Karame". Payment is cash only; cards, e-money, and QR code payments are not accepted.
3Seating and receiving your order
There are only 10 counter seats; please sit according to the staff's guidance. The estimated waiting time for your order is 5-10 minutes. The owner and staff give a reserved impression but provide polite service, sometimes asking things like "Was the Kara Jiro not spicy enough?" after you've finished eating.
4Other notes
After your dish arrives, start by mixing the noodles and ingredients thoroughly using the "tenchi-gaeshi" (flipping the contents upside down) method. If you ordered extra ヤサイ (yasai, vegetables), it's important to do tenchi-gaeshi quickly to prevent the noodles from becoming soggy. Chili flakes are available on the table for adjusting spiciness later. Enjoy the crunchy texture of the pork soft bones. The noodles are extra-thick and chewy, and even the Small 250g portion is more filling than at other shops, so for your first visit, it's safer to start with Mini 125g or Small. The 26th of every month is "Jiro Day," offering free noodle upsize (with an upper limit). After eating, it is customary to briefly tidy up your area, such as stacking water glasses, before leaving the shop.
