1Before entering
Located about a 5-minute walk from Yabacho Station, in the "Joshi-dai" entertainment district of Sakae 4-chome. Open in two shifts (Lunch 11:30 AM - 2:00 PM / Dinner 6:00 PM - 3:00 AM the next day; Fri/Sat until 4:00 AM the next day), closed on Sundays. As a late-night establishment, many customers use it for a final meal after drinking, and it often fills up after 10 PM. On weekdays, you can often enter without waiting between 12 PM and 1 PM, and the last order just before 2 PM is also a good target.
2Purchasing meal tickets and ordering
Purchase meal tickets at the ticket machine at the entrance. Buttons have photo displays, but no English display. Signature dishes include Niboshi Chuka Soba (choose from light, rich, or super-rich, from 850 yen), Niboshi Tsukemen (thick and extra-rich available), Mazesoba, and Niboshi Jiro (1,000 yen). If you choose Niboshi Jiro, when you hand your ticket to the staff, you will be asked orally "What would you like for garlic?" (Yasai mashi (more vegetables) and Abura mashi (more back fat) are free and added by default). If you have plans the next day or want to avoid the smell, answer "none". Payment is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating and receiving your order
The layout is mainly counter seating, but table seats are also available. Staff are often from Southeast Asia. Serving time is approximately 12-15 minutes during busy periods, and 5-7 minutes when it's not crowded. For Niboshi Jiro, the bean sprouts are served piled high, so it's easier to eat if you first crush them with chopsticks and mix them with the noodles.

Seasoning items for flavor change are available on the table, including dried bonito powder (for adding extra niboshi flavor), chili oil, and white pepper. For Niboshi Chuka Soba and Extra Thick Niboshi Soba, it's common to sprinkle fish powder midway through to enhance the niboshi flavor. For Niboshi Jiro, the style is to slurp the noodles together while breaking down the mountain of vegetables. During late-night hours (after 10 PM), seats tend to fill up with customers returning from drinking, and sometimes there's a line of customers waiting when you leave. Limited-time menus such as "Tsubame Sanjo" are occasionally offered, so it's a good idea to check the ticket machine for a limited menu button.
