Overview
Opened in 2013, located on Teramachi Street, a 3-minute walk from Kyoto Kawaramachi Station, this is a renowned dashi (broth) ramen shop representing Kyoto. It has been awarded Bib Gourmand in the Michelin Guide Kyoto/Osaka for 9 consecutive years (2016-2024) and is a regular recipient of the Tabelog Ramen WEST Hyakumeiten (Top 100 Shops). The interior features a pristine atmosphere reminiscent of a Kappo (Japanese fine dining) restaurant with white wood counters, offering an experience closer to a Japanese bowl dish than traditional ramen. The signature dishes are two types of "Dashi Soba" (broth noodles): white soy sauce and black soy sauce. These dishes use no animal fats, and the star is a dashi primarily made from top-grade "Honkarebushi" (dried bonito flakes) from Ibusuki, Kagoshima Prefecture, shaved to an ultra-thin 0.01mm, along with several other types of seafood flakes slowly concentrated at low temperatures. The white soy sauce version gently enhances the dashi's contour with a mellow flavor, while the black soy sauce version offers a crisp and aromatic soy sauce experience. The aroma of the dashi rising from the bowl is so refined it makes you straighten your back. The homemade thin noodles, a blend of two types of Hokkaido wheat and Kyoto-produced stone-ground whole wheat flour, have a smooth texture and firm elasticity that perfectly integrates with the dashi soup. The toppings include thinly sliced pork shoulder chashu cooked at low temperature, bamboo shoots (takenoko manma) instead of menma, nori (seaweed), green onions, shredded white onions, and the beautifully placed ultra-thin honkarebushi in the center. Yuzu peel is served on a separate plate. Various flavor changes can be enjoyed with tabletop condiments such as tororo kombu (shredded kelp), Asakura sansho (Japanese pepper), ichimi (red chili powder), o-gara shichimi (extra-spicy seven-spice blend), and white pepper. Especially, adding tororo kombu midway through creates a new dimension of flavor, adding thickness and depth to the dashi. Side dishes such as homemade shumai (2 pieces for 600 yen, made with Kyo no Miyako mochi pork + bamboo shoots + onions) and Red Jewel egg over rice with ultra-thin bonito flakes (500 yen, using eggs awarded by the Minister of Agriculture, Forestry and Fisheries) are also of high quality, allowing you to enjoy a full meal from ramen to dessert. Since no animal fats are used, it can also be animal-fat free. In addition to the main store, it is a popular brand with three other branches: "Inoichi Hanare" and a new store in Uji.

1Before Entering the Store
Conveniently located a 3-minute walk from Kyoto Kawaramachi Station, along Teramachi Street. Open 11:00-14:30 / 17:30-21:00, irregular holidays. A numbered ticket system is in place; tickets are distributed at the storefront from 10:30 for lunch and 16:00 for dinner. When you receive your ticket, the staff will also take your order, creating a unique operation where the ticket, order, and designated return time are managed together. If you don't pick up your ticket within one hour of distribution, your desired time slot may be filled. Many regulars queue 10 minutes before distribution starts, and the ratio of international tourists is extremely high (sometimes 90% foreign customers).
2Purchasing Meal Tickets / Ordering
Your order will be taken when you receive your numbered ticket, and then you'll line up again at the storefront to enter at your designated time. The signature dishes are two types of Dashi Soba: white soy sauce and black soy sauce, starting from 1,200 yen each. Toppings and special versions include Dashi Soba with Red Jewel flavored egg (1,550 yen), Seared Chashu Dashi Soba (2,050 yen), etc. Side dishes include homemade shumai (2 pieces for 600 yen), Red Jewel egg over rice with ultra-thin bonito flakes (500 yen), and Seared Scallop and Tofu Dashi Mayo Don. Payment is cashless only; cash is not accepted. Credit cards (VISA, Master, JCB, AMEX), transportation IC cards (Suica, etc.), iD, QUICPay, PayPay, and d-payment are accepted.
3Seating / Receiving Your Order
Staff will guide you to either one of the 8 L-shaped high counter seats or one of the two 4-person tables (total 16 seats). Since your order is taken in advance, your ramen is often served within about 5 minutes of being seated. Approximately 6 staff members work efficiently, providing clean and well-received service to tourists.

How to enjoy the signature ramen: First, savor the umami of the dashi and noodles as they are. Midway through, add the yuzu peel from the separate plate for a refreshing touch. Towards the end, gradually add small amounts of tororo kombu from the table to add thickness and depth to the dashi, creating a whole new dimension of flavor. Adding accents with Asakura sansho or o-gara shichimi is also a Kyoto-style flavor change. The homemade shumai are seasoned to be eaten as is, but soy sauce and mustard are also provided. For the finale, many tourists enjoy soaking the Red Jewel egg over rice in the soup to create a "dashi chazuke" (rice in broth) style dish. Payment is made after the meal; cash is not accepted, so please prepare for cashless payment in advance.

個人的には京都で1番美味しいラーメン屋さん
丁寧にとられた出汁は上品で、麺とあっていて凄く美味しかったです!素材へのこだわりを強く感じました。また、味変のとろろ昆布や柚子もめちゃ良かったです
