Menya Naminooto
麺屋 波のおと
Overview
Menya Naminooto Hakata is a non-tonkotsu ramen shop located in a suburban area of Kamimuta, Hakata-ku, just off the Handobashi IC of the Fukuoka Urban Expressway. Opened in February 2020 by an owner with 26 years of experience at Ippudo, this is a rare establishment in Hakata that offers Chintan-kei (clear soup) ramen in salt, shoyu, miso, and Tori-Paitan (chicken white soup) varieties. Locally, it's often introduced as the place for Shio Ramen (salt-based ramen) in Hakata. The signature Shio Ramen features a double soup made from a delicate animal-based broth simmered slowly with chicken bones and vegetables, combined with a seafood dashi from dried sardines and bonito flakes. The refreshing aroma of yuzu peel and a hint of chili oil as a secret ingredient add a subtle spiciness, resulting in a delicate yet profound flavor. The noodles are medium-thick, smooth, chewy, flat, and straight, with a firm yet springy texture that blends perfectly with the soup. Toppings such as generously sized, lean and meaty chashu, a perfectly soft-boiled Ajitama (marinated egg), plump wontons, and chicken meatballs (tsukune) are also impeccably crafted. The diverse menu includes Shoyu Ramen for 900 yen, Shio Ajitama Ramen for 1050 yen, Tori Shio Paitan Ramen for 950-1000 yen, and a seasonal winter-only Miso Ramen for 1000 yen, offering options across seasons and genres. The gyoza are garlic-free and lightly seasoned, and the gyoza and meat miso rice set for 250 yen, available on weekdays from 11 AM to 3 PM, offers outstanding value for money. On the table, you'll find complimentary Gari (pickled ginger) and garlic-pickled kombu, hidden specialties perfect for refreshing your palate or changing the flavor. The complimentary water is also refreshing lemon water, and the bright, glass-fronted interior, much like a cafe, creates an inviting atmosphere for solo women diners or families. For those tired of tonkotsu or who prefer not to eat it, this shop serves as an important alternative during their stay in Hakata.
How to Order
1Before entering
The store is located a 10-minute walk (846m) from Higashi-Hie Station, right after exiting the Hando-bashi IC of the Fukuoka Urban Expressway. It's a suburban store designed for car access, with 9 parking spaces plus a second parking lot. Opening hours are Monday-Saturday 11:00-21:00, closed on Sundays, and will close once the soup runs out. It's relatively easy to enter during weekday lunch and dinner, but on Saturdays and holidays, the parking lot can get full during lunchtime, so arriving a bit early is recommended for peace of mind. If using the train, walking from Higashi-Hie Station or taking a taxi/bus from Hakata Station is practical.
2Purchasing meal tickets and ordering
A ticket machine is located immediately upon entering the store. If there are empty seats, buy your meal ticket at the machine and proceed directly to your seat. If it's crowded and you're waiting at the entrance or in the parking lot, observe the queue. Decide whether to join the end of the line and buy your meal ticket when it's your turn, or buy it first and then wait. The menu is easy to understand with photos; there are no English descriptions, but the menu names are simple: "Shio" (Salt), "Shoyu" (Soy Sauce), "Miso", and "Tori-Shio Paitan" (Chicken Salt Paitan). The signature Shoyu Ramen is 900 yen, Shio Ajitama Ramen 1050 yen, Tori-Shio Paitan Ramen 950-1000 yen, and a winter/limited Miso Ramen is 1000 yen. Please note that this shop does not have a 替え玉 (kaedama: extra noodle) system; only extra noodles for +50 yen are available. If you want a hearty meal, it's recommended to choose extra noodles from the start or combine it with a gyoza and nikumiso-gohan (minced meat over rice) set for 250 yen (weekdays 11:00-15:00). Payment is only accepted via cash and d払い (d-barai); credit cards, transportation IC cards, and other QR payments are not accepted.
3Seating and Receiving
The shop has a total of 24 seats: 12 counter seats plus 3 tables for 4 people. It's a clean and inviting store, easy for families and female customers, characterized by a bright, cafe-like atmosphere with glass windows. Serving time is generally 4-10 minutes. After your bowl is served, it is recommended to first take a sip of the soup, then slurp the medium-thick flat noodles.
4Other
"Gari" (pickled ginger) and "Konbu no Garlic-zuke" (garlic-pickled kelp) are provided for free on the table. Regulars enjoy adding a little bit at a time in the latter half of the meal to cleanse the palate or change the flavor. The cold water (lemon water) also helps reset your palate. The Tori-Shio Paitan has a spicy kick from chili oil; if you are not fond of spicy food, you can inform the staff beforehand, and they might adjust the spice level. Since the store closes once the soup runs out, for evening visits, it's safe to aim to arrive before 21:00. After finishing your meal, lift your bowl and quietly exit the store.
