Menya Nukaji
麺屋ぬかじ
Overview
"Menya Nukaji" (麺屋ぬかじ) is a specialty restaurant for rich seafood tonkotsu (pork bone) ramen, located just a 3-minute walk from Shibuya Station's Exit 3 (servicing the Tokyu Den-en-toshi Line, Tokyu Toyoko Line, and Tokyo Metro lines) at Udagawacho 3-12 monostep2 1F. This highly-regarded establishment moved from Setagaya, Setagaya Ward, and continues to draw crowds with its constant lines in Shibuya, maintaining its status as a popular destination. The menu prominently features two main options: Ramen (1,180 yen) and Tsukemen (つけめん - dipping noodles) (1,280 yen), both highlighted by their rich seafood tonkotsu soup. The ramen offers a simple yet satisfying composition of brown seafood tonkotsu soup, medium-thick straight noodles, large slices of char siu (braised pork), menma (bamboo shoots), and green onions. Its well-balanced saltiness allows for an enjoyable "ajihen" (flavor variation) experience with the noodles and char siu by adding nori (seaweed) (100 yen). The tsukemen is a rich, seafood-infused type, with a thick dipping broth (tsukejiru) boasting a strong presence of fish powder. Its chewy, medium-thick noodles pair excellently with the rich broth, while the thick, melt-in-your-mouth tender char siu is also a perfect accompaniment to rice. For a limited time, "Nukajiro" makes an appearance—a bowl inspired by the Jiro-kei (二郎系 - a distinct ramen style known for large portions and customization) tradition, offering "call" options for extra garlic (ニンニク), extra pork fat (アブラマシ), and extra vegetables (ヤサイマシ). Even with extra vegetables (yasai-mashi), it forms a satisfying "mountain," and the pork fat (abura) is uniquely served in large, chunky cuts, providing a distinct "eating abura" sensation. The noodles, unlike the often firm and dense "washiwashi-kei" type found in typical Jiro-kei ramen, are a slightly easier-to-eat medium-thick variety, resulting in a composition that isn't overly "junk food" style. A welcome addition in this era of rising prices is the free service of Tamago Kake Gohan (TKG - raw egg over rice), with options for just raw egg or plain rice. Soup wari (soup dilution) is available upon request from the staff, allowing guests to savor the flavors to the very last drop. The restaurant features a compact interior with only 8 counter seats, and waiting times of around 30 minutes are common during peak lunch hours.
How to Order
1Before Entering
A rich seafood tonkotsu ramen shop located at Udagawacho 3-12 monostep2 1F, a 3-minute walk from Shibuya Station Exit 3 (Tokyu Den-en-toshi Line, Tokyu Toyoko Line, Tokyo Metro Hanzomon Line, Fukutoshin Line) and a 5-minute walk from Shibuya Station Hachiko Exit (JR Yamanote Line, Metro Ginza Line). The shop has relocated from Setagaya. Open Monday-Saturday 11:00-17:00, holidays 11:00-16:00, closed Sundays; lunch hours only. It is a popular shop where queues are common during lunch, for example, a 30-minute wait for 3 groups (8 people) at 12 PM on Saturday, and a full house with 1 person waiting for a seat at 11:30 AM on weekdays.
2Purchase Meal Ticket
There is a ticket vending machine at the entrance of the shop. This is a pre-purchase system where you buy a meal ticket first, then join the queue. The ticket vending machine has no English display. Signature items include Ramen 1180 yen, Nori (seaweed) 100 yen, Tsukemen 1280 yen, Spicy Tsukemen 1330 yen, Special Tsukemen 1730 yen, and a limited Jiro-style inspired "Nukajiro" (customization available: Ninniku (garlic), Abura mashi (more back fat), Yasai mashi (more vegetables)). Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and Receiving Your Order
The compact interior has only 8 counter seats. After purchasing your meal ticket, line up outside, and you will be guided in order as seats become available. A complimentary tamago kake gohan (egg over rice, choice of raw egg only or rice only) is a welcome service. To request soup wari (soup dilution), please ask a staff member.
4Other
The main offerings are ramen and tsukemen, both featuring a rich seafood tonkotsu soup. The ramen consists of a brown seafood tonkotsu soup, medium-thick straight noodles, large chashu, menma, and green onions, with a pleasant saltiness. Adding 100 yen nori topping allows for a change in flavor. The tsukemen is a rich type with a slightly sour, strong seafood flavor, and the dipping soup has a thick consistency with a clear fish powder presence. The chashu is thick and so tender it crumbles, pairing well with rice. The limited-time "Nukajiro" is a Jiro-style inspired dish, with customization for Ninniku (ninniku, garlic), Abura mashi (abura mashi, more back fat), and Yasai mashi (yasai mashi, more vegetables); even Yasai mashi (yasai mashi, more vegetables) creates a satisfying pile. The Abura (abura, back fat) comes in large, chunky pieces, offering a unique "chewable" back fat experience.
