Business hours vary by day (Tue-Thu 10:45-15:15, Fri 10:45-15:15/17:00-19:30, Sat 10:30-15:15/17:00-19:30, Sun/Holidays 10:30-15:15), closed on Mondays. The opening time is slightly earlier on weekends. This is an extremely popular restaurant, said to be Hokkaido's #1 Miso Ramen, with around 30 people lining up 15 minutes before opening, 50 people waiting 40 minutes before opening, 16 people waiting outside at 12:45 on Saturday, 30-40 people waiting (1-hour wait) at 11:15 on weekdays, and rarely no line at 2:30 PM on Saturday. A 1-2 hour wait is common during weekends and peak lunch hours. The line winds around the store from the entrance, and the turnover is good with excellent operations.

2Ordering - Verbal Order

Staff take orders from customers while they are waiting in line outside (no ticket machine). This efficient system means that once you are seated, your ramen will be served in just a few minutes, as your order is already placed. Signature dishes include Miso Ramen (1000 yen, most popular), Spicy Miso Ramen (1050 yen), Shio Ramen (1000 yen), Shoyu Ramen, Men-han (900 yen, small portion), rice, ajitama (seasoned egg) topping, and souvenir raw ramen (Miso/Shoyu). Payment is cash only; credit cards, e-money, and QR code payments are not accepted.

3Seating and Receiving

The interior has 10 counter seats and 3 tables. Customers are guided to available seats in order. Since orders are placed beforehand, ramen is served in about 5-7 minutes. The owner and staff's operations are excellent, supporting high turnover, and the waiting time, even for a long line, does not feel stressful due to the efficient pace.

Owner Masahiko Oku, who trained for 7 years at Sapporo's long-established "Sumire," opened this representative Sapporo Miso Ramen shop in Misono on November 3, 2000. It has consistently received THE TABELOG AWARD, has been repeatedly selected for Ramen Hyakumeiten (Top 100 Ramen Shops), and is inducted into the Ramen Walker Grand Prix Hokkaido Hall of Fame, positioning it highly in Hokkaido's ramen evaluations. Its greatest feature is its unique Miso Ramen, which adds lightness with a clear broth based on Sumire's flavor. The surface oil is minimal, and the color is not dark, but the hot soup is indeed rich. It's pork bone-based with the richness of miso and a good hint of garlic, with the aroma of bean sprouts stir-fried in lard in an iron pot rising up. The soup is well-salted and deeply flavorful, with a level of perfection typical of the "Jun-Sumire" style, making you want to drink every last drop. The noodles are plump, yellow, medium-thick, curly noodles from Morizumi Seimen, cooked to an exquisite doneness (just before they become too soft) and a unique floury texture that matches the soup perfectly. A common way to change the flavor is to dissolve the grated ginger on top of the char siu halfway through, creating a dish that inherits Sumire's tradition while establishing its own direction. The ingredients are simple: stir-fried bean sprouts, char siu, menma, white negi, and ginger, but each is perfected, forming a flawless composition. Souvenir raw noodles (Miso/Shoyu) are also popular, often purchased by tourists as a memory of Sapporo.
